La Chartreuse
Modern Cuisine · 必比登
€€
This village on the road to the Alps has long benefited from the generosity of the Carthusian monks, after whom the restaurant is named. The menu features well-executed modern cuisine that makes the most of seasonal (and often local) ingredients. The ever-popular 64°C egg is beautifully paired with a tempting medley of mushrooms; the classic beef chuck is slowly simmered in Mondeuse and gentian as well as cervelle de canut (a herby cheese spread); the craquelin chou pastry is served with Grenoble walnut praline, hazelnut ice cream and melted chocolate – comfort food that uplifts the spirits! This restaurant is run by a young couple who are passionate about what they do: chef Flavio Ricco and Lola Goudenove. In the heart of the village it has a cosy dining area done out in the style of a lodge. The blend of wood and stone makes for a relaxing feel. The chef prepares traditional cuisine with a measure of creativity, highlighting local ingredients on a set menu (with options). This lunchtime, the chef demonstrated his finesse when revisiting soupe châtrée – a rather hearty Samoëns speciality made with bread, Tomme de Savoie cheese and onion soup, that was followed by a fillet of sea

One thing is sure, the chef loves what he does, and this passion is contagious. He creates food that is contemporary, meticulous and generous with superb quality ingredients such as fresh fish and seafood. His John Dory fillets and squid cooked à la plancha are just one delicious example of his dishes.

Located in the historic village, near the church, this eatery serves traditional toothsome nosh. A veteran chef regales diners with well-crafted dishes like cream of pumpkin soup served with shavings of Abondance cheese and whipped cream lightly flavoured with passion fruit or a carpaccio of scallops with a jus of lobster shells. His gourmet repertoire also includes timeless Savoyard specialities ranging from gratinée gourmande to fondue Savoyard made with champagne!

La Table d'Émilie

€€
At the helm of this friendly restaurant, Émilie and Yoann showcase first-rate produce in the form of a market-fresh set menu that offers excellent value for money at lunchtime and sets its sights higher in the evening. The chef has a sure touch, especially when it comes to desserts. In fine weather, head for the pleasant garden terrace.

Confins des Sens

The house speciality is a delicious muscat-flavoured foie gras soup with a confit of red onions and ‘cromesquis’. The chefs pay tribute to the region whilst respecting the seasons, illustrated by a velvety soup of green peas and an ice cream of fresh cow’s cheese flavoured with wild garlic. Other highlights include pork cheeks braised in a local red wine or free-range chicken wings stuffed with morels and flanked by “pressed” potatoes (finely sliced and stacked before being roasted). The terrace is glorious in the sunshine.

Set beside a lake and boasting a magnificent view of Mont Blanc, this chalet has a resolutely understated decor. On the menu, traditional cuisine is given free rein, in dishes such as slow-cooked egg, lentils, smoked diot (pork sausages from the regional repertoire) and a bacon emulsion, or beef bourguignon. In fact, the chef won a competition with his pâté en croûte.

From the threshold of this listed 19C farmhouse, you can see Mont Blanc on the horizon. With its mountain-style interior (wood panelling, whitewashed walls, parquet flooring) and traditional cuisine by Florent Meyer (who has worked with Flocons de Sel chef Emmanuel Renaut), the restaurant is an instant hit… This is thanks, in particular, to the vin jaune sauce that envelops the delicious free-range chicken supreme, or the moreish tartiflette with a nod to the village's terroir – a signature starter. Plus a warm welcome awaits you!
