He takes meticulous care to keep the flavours of each piece pristine without interfering with the next. His lavish double uni sushi, with bafun uni stirred into the vinegared rice and topped with lobes of murasaki uni, boasts intense briny sweetness and a buttery texture.

His passion for cooking and his experimental approach on food combinations are evidenced by his original and extraordinary creations made with top-notch ingredients mostly from his native Japan.
