LA CHAVALLERA in der Krone Säumerei am Inn

Modern Cuisine, Alpine · ★ Michelin

€€€€

In the time-honoured Krone, your dedicated hosts – the well-travelled James Baron (previously chef at the MICHELIN-starred Amber in Hong Kong) and his charming wife Natacha – have honed an interesting concept, which has the kitchen produce precise, pared-back dishes made with top-notch ingredients that reflect the restaurant's ties to the region. In addition to the four-, six- or nine-course tasting menu, there is a seasonal à la carte selection. The space is also extremely inviting: Entirely done out in Swiss stone pine, the compact dining space brims with atmosphere, further fuelled by the p

Chesa Stüva Colani

Innovative, Italian · ★ Michelin

€€€€

Modern in terms of technique, intricate, and anything but run-of-the-mill, Paolo Casanova's cooking draws heavily on the region and the seasons. The chef is tireless: he personally forages for and grows herbs, he ferments and pickles ingredients etc. This lends his dishes a very personal touch and creates intriguing flavours. Diners choose between the nine-course "Lasciami Libero di Giocare con Te", the five-course "I 5 Elementi" or the seven-course "Ricetta Vegana", as well as à la carte dishes such as linguine ai gamberi. The house-baked bread is outstanding. As for the setting, it is also i

Da Vittorio - St. Moritz

Italian · ★★ Michelin

If you happen to be in St Moritz in the winter season, then take advantage of the opportunity to dine at the stylish yet cosy restaurant of the Carlton Hotel, which boasts a glorious location overlooking the lake. Kick off with an aperitif in the charming lounge, then treat yourself to Italian food with soul – no frills; it's the craftsmanship and flavour that count. During the winter months, chef Paolo Rota from the flagship restaurant in Brusaporto, Lombardy, and his team create precise and effortless dishes that put the produce in the spotlight. Some of the brilliantly prepared specialities

Colani Bistrot

€€

Just off the lobby of the tasteful and well-appointed Hotel Colani, Colani Bistrot is in some ways the little sibling of the fine dining restaurant. The food is excellent – Mediterranean cuisine with a local twist. We can certainly recommend the "Ravioli of the Day". Meat eaters should ask about the main dish centred on venison or veal – showcasing a different cut every day. The appealing range of desserts and cakes also deserves a mention. Friendly service, a laid-back atmosphere and modern interior design featuring pale wood and a whole host of decorative details. There is a charming little

Donatz

Country cooking

€€€

Cornelia and René A Donatz run their business with great dedication. In an elegant rustic-style decor, they serve good fresh cuisine, including classic veal dishes, Angus beef "bestsellers", vegetarian fare and fish such as Graubünden salmon from Lostallo. They stock some 550 wines (20 available by the glass) – a passion of the owner. Donatz Wine Bar proposes a smaller menu. Hotel Donatz has appealingly modern and comfortable guestrooms.

With rustic floorboards, bare wooden tables and charming decorative touches including stylish chandeliers, paintings, wine bottles and wall clocks, the setting could not be more inviting. The atmosphere is pleasingly laid back; it's clear that the team enjoys what they do, and that strikes a chord with diners, who are basically treated as friends. The down-to-earth cuisine suits the vibe perfectly. Whether you plump for the pasta of the day, the red prawn carpaccio or the vitello tonnato, you are guaranteed a flavoursome dish made with select, fresh ingredients. The range of moderately priced

In the charming Hotel Walther, one of Pontresina's most emblematic hotels, this lovely Trattoria has an authentic, lively atmosphere and a stylish rustic feel. The appetising menu embraces all regions of Italy, with delicious pasta as the centrepiece and the focus firmly on flavour and freshness. Friendly Italian service and a good selection of wines.

Ya Mama by Moses Ceylan

International, Farm to table

€€

In the tradition-steeped Cresta Palace Hotel, Moses Ceylan (best known for his work at Einstein Gourmet in St Gallen) whisks you away on a culinary journey to the Levant, drawing on his heritage. He skilfully combines flavours from southern Turkey, Syria and Lebanon with produce from the Engadine. Something of a tribute to his mother, the menu features finely seasoned creations such as Aramaic-style deep-fried local trout with caviar, sumac nage and herb and blossom salad, or marinated baharat-spiced saddle of lamb with cannelloni bean cream, roasted vegetable ragout, pomegranate jus and toast
