Leave Utrecht's bustling city centre behind for a while and let yourself be swept away by Karel 5's medieval charm. Luxury meets authenticity in this historical oasis, where you can admire old paintings and sculptures as you dine beneath crystal chandeliers, and, when the weather is fine, have lunch on the beautiful garden terrace. Leon Mazairac and his team conjure up cuisine that does justice to the setting, for a true fine dining experience. Game from the Veluwe, Belgian endive, saffron from Herentals: Chef Mazairac makes a point of working only with top-quality produce that he sources as l

Chef Tommy and maître d' Vera have given their charming premises in the centre of Utrecht a stylish makeover. Soft mood lighting contributes to an intimate feel, understated design has a soothing effect and a large mural enlivens the space. Vera runs the dining room with effortless grace; Tommy presents a passionate tribute to his terroir through his dishes. Vegetables, sourced as locally as possible, play a central role (a vegetarian set menu is also available). This is a chef who cooks with great precision, shows a deft touch in applying fresh acidic notes and skilfully plays with temperatur

Tradition, a street food influence, authenticity and purity are the words that best sum up this popular restaurant, which showcases the full array of Indonesian cuisine. The rijsttafel (a medley of dishes with rice – also available in a vegan version) provides an excellent opportunity to discover the chef's talent for seasoning and balancing intense flavours. From the succulence of the lamb, the distinctly nutty flavour of the peanut sauce and the delicate spiciness of the gado gado, you can see that this is a chef who knows how to combine generosity with subtlety. Be sure to try the roast goa

Pure and honest. These two words encapsulate this vibrant place, though they hardly do it justice. Joyce and Victor's deep respect for the seasons and Dutch produce is truly inspiring. They work closely with their suppliers and encourage chef Josephien Blom to be creative within the framework of their sustainable values. The pig's trotters with a tangy remoulade sauce is a classic of the house, but she also gives potatoes a surprising twist with a seaweed sauce and crispy serrated wrack. Prepare to be amazed!

Admire the grandeur of this fully restored 17C château as you take the road up, walk across the little bridge and immerse yourself in its attractive blend of historical features and contemporary luxury. Heemstede Castle is an exceptional and enchanting location, and in Ollie Schuiling it has a very talented chef at the helm. You can expect a few surprises on the wine list, including some sought-after gems from Europe, as well as a nod to the Netherlands. The wines perfectly complement the intense flavours of the chef's dishes. Exceptionally fresh top-quality produce, sublime sauces and inventi

Behind the dark blue façade on the Mariaplaats, plants and cacti dominate the floral decor at Le Jardin. The front of the restaurant is more intimate; the back is brighter and airier, but it is cosy and inviting throughout. This is a lively place, both in terms of the atmosphere and the cuisine. "Groentenomie" is the name of Tamara de Borst's culinary concept, which builds on vegetables and herbs; meat or fish can be added, if you wish. Rooted in French tradition, her cuisine incorporates innovative twists and occasional Asian seasonings. Think fleshy pumpkin with a herby crunch, a fruity jus

Brasserie Goeie Louisa

Classic Cuisine, Farm to table

€€

This brasserie shares the medieval charm of the upscale hotel, Karel V, to which it belongs. Once a monastery, the property has been elegantly decorated but has retained its original character. The chefs here like to put their own unique spin on classic recipes. They understand the value of a decent béarnaise sauce with a succulent cut of meat, but they also enjoy playing with the tartness of orange to elevate a dish based on lobster and fennel. This cuisine presents familiar flavours with an exciting twist.

Bistro Madeleine

As typical as the name sounds, this place is far from being your average bistro. Rather than a stuffy decor, you can expect a 21C take on the standard bistro setting. The chef conjures up the same impression on the plate. Upon entering, you are greeted by the delicious aroma of fresh bread. Here, simplicity is synonymous with robust flavours. The modern touches he brings to the dishes add a surprising twist. Think ray wing with a roasted pepper sauce vierge, creamed celeriac and a frothy tarragon sauce. The carefully curated wine list is second to none. An atypical bistro!
