Sen Omakase
Japanese · ★ Michelin
€€€€
If you enjoy Japanese cuisine, this is one of those places that is a must given its focus on presentation and the innovative touch that they add to its dishes (over 35 different courses). Chef Steven Wu, who trained in restaurants in both Tokyo and Kyoto, offers guests his surprise Omakase menu which is the only option here. His Kaiseki-style cooking places full emphasis on the seasonality of ingredients and a respect for tradition, replicating the five types of time-honoured preparation and cooking methods to ensure the perfect harmony between visual and tasting sensations. Galician lobster awakening on the beaches of Goa, drunk crabs partying in Jerez, the Minutejo del Agus... The hedonistic cuisine of Dabiz Muñoz is fun and irreverent in many details, and breaks the barriers of the gastronomic avant-garde to enter a highly personal dreamlike plane, inviting the diner to live a roller coaster of emotions. In his striking establishment they serve a unique tasting menu, called ‘The Kitchen of the Flying Pigs’, which takes you on a spectacular journey through the different cuisines of the world, with special emphasis on Asian fusion but with the regular use of Spani

Chef Óscar Velasco, ably supported by second in command and dessert maestro Montse Abellà, is back! Here, the couple, who view this challenge as a ”lifelong project”, focus on cooking that is close to Óscar’s heart and always showcases contemporary market-inspired cuisine that champions seasonal ingredients yet with a little more freedom than in his previous projects, while at the same time demonstrating equal levels of technique and elegance. The à la carte, featuring dishes such as white prawns “al ajillo” with fried egg and potatoes (which finds its way on to the menu at the insistence of h

Gaytán
Modern Cuisine · ★ Michelin

Gaytán is the culmination of a dream which then became a reality for chef Javier Aranda and as a result is far from your usual type of restaurant. This space, which features an interior with many design details and two private lounges, is dominated by original wooden columns that flank the large open kitchen overlooking the dining room, so that guests feel as though they are part of the creative process. The cuisine, complemented by a small menu for business customers during the week, aims to showcase what they describe here as the “the joys of the season”, something they succeed in doing via

A contemporary restaurant with an open-view kitchen, two counters and a Japanese ambience that is far from lacking in personality. Its meticulous, constantly evolving cuisine could be described by quoting the Greek philosopher Heracles: “No man ever steps in the same river twice”. In his restaurant, which shares the nickname given to him by his grandfather when he was a boy (“Hugochan”, or “little Hugo”), chef Hugo Muñoz conjures up Japanese cuisine (on an à la carte and a personalised Omakase menu) in which seasonal ingredients take centre stage, incorporating enjoyable influences from other

A restaurant that is definitely in vogue and one which continues to gain new fans – even the royal family celebrated a birthday here! Located close to the legendary Santiago Bernabéu football stadium, Pabú reflects the gourmet vision of Coco Montes, a Cordon Bleu chef who has worked in prestigious restaurants such as Arpège in Paris, under the baton of famous chef Alain Passard. His cooking is based around the purity of ingredients, hence his championing of micro-seasonal cuisine that changes daily in line with provisions from his suppliers and is highly focused on vegetables, with little prot

Smoked Room
Contemporary · ★★ Michelin
€€€€
This restaurant is somewhat reminiscent of a clandestine dining space, and as such a meal here is quite the experience, where the team in the kitchen play ingeniously with smoky flavours and aromas without ever overwhelming the palate. Located in the Hyatt Regency Hesperia Madrid, Smoked Room has its own entrance and views itself as a highly exclusive dining space which is separate from the Leña Madrid restaurant and has its own valet parking service. The aesthetically pleasing dining area has an intimate, meticulous feel and features a striking Japanese-style bar facing the kitchen as well as

Having worked in various prestigious restaurants such as Nacho Manzano’s legendary Casa Marcial, chefs Carlos Griffo and Miguel Ángel García do their utmost to combine the skills they have learnt to create “comida de casa” – traditional home cooking based around seasonal ingredients, albeit in an updated format, but one that still respects their full flavours. The interior, which is now more elegant and features an open kitchen, provides the backdrop for an à la carte (including dishes such as hake tortilla with pil-pil and chilli peppers, shoulder of rabbit escabeche, rice with pigeon, etc) a
