Owner-chef Manuel Alonso offers guests an updated take on traditional cuisine, the aim of which is create a range of sensations and a return to the region’s origins via the à la carte (don’t miss the shrimp from Santa Pola, the iconic tripe, or the thin-noodled “fideuá” from Gandía) and an array of set menus (Calma, Miradas, Escapadas etc).

The couple at the helm, with Paco Castelló at the wheel in the kitchen and Gabri Tarín in charge of the dining room, declare themselves to be 100% Mediterranean, so that gastronomic culture is evident in every dish. In this small restaurant, located in a pedestrianised street in the old town (the area known as La Ciudad Ducal), you will find a proposal that revolves exclusively around surprise menus (Ona and Ona Cuina Oberta) that change daily, depending on the market and always giving a great deal of prominence to fish and vegetables.
