A temple for the production of culatello ham, which features in the dishes served and is also matured on the premises for 16, 26 and 38 months (the maturing rooms are well worth a visit), Al Vedel also serves other regional specialities, as well as more imaginative fare. The menu features dishes such as gran lesso(boiled beef and chicken), delicious Bourguignon-style snails, tortel dols (tortelli pasta with a hint of sweetness), and specialities enhanced by the addition of Parmesan cheese and red butter. This delightful, long-established family trattoria, in business for over a century, has the motto “Chi mangium nustran” (“here we eat local”) in a demonstration of its commitment to cuisine from the Lower Po valley, although other Italian dishes also feature on the menu. At midday, choose from a selection of simple, delicious and reasonably priced homemade dishes, while in the evening just one single tasting menu, concluding with the dessert trolley, is served.

In business since 1850 and now run by the sixth generation, this simple and authentic family trattoria is a mecca for fans of Bassa Padana cuisine. The menu boasts an extraordinary combination of specialities from Cremona and Mantova, including local cured meats, pumpkin tortelli with sweet tomato sauté, “porc-tonné” (meat with tuna) from an original recipe by Pellegrino Artusi, and sbrisolona cake with warm zabaglione. Although you will be offered a menu, we highly recommend chatting with the exuberant chef, who will be happy to guide you in your choice of food and wine.

A contemporary trattoria where you can enjoy some of the region’s delicious specialities, all of which are faithfully reproduced with maybe just a hint of modern flavour – this is one of the most interesting restaurants in central Parma! We particularly enjoyed the bomba di riso (stuffed rice pie) with pigeon ragù, as well as the fresh pastas and the roast meat stuffed with roast potatoes.

The Osteria del 36 traces its roots to 1880 and owes its name to a curious tradition: wine was once sold here at 36 cents a litre. Today it presents a cuisine firmly anchored in the Emilian tradition, set alongside touches of a more contemporary flavour, as in the crispy loin of rabbit with Prosciutto di Parma, cream of onions, carrots and cardoncelli mushrooms.
