La Côte d'Or

Modern Cuisine · ★★ Michelin

This iconic institution of the Morvan region, which has seen so many generations of chefs and fine food lovers pass through its doors, has embarked on a new chapter. In the wake of its auspicious débuts with Alexandre Dumaine and Bernard Loiseau, chef Louis-Philippe Vigilant now rolls out up-to-the-minute cuisine founded on solid classical bases. He has added his hallmark to more personal recipes that star first-class ingredients. Nostalgic guests can travel back in time and sample some of Bernard Loiseau’s iconic classics, such as frog's legs with garlic purée and parsley juice. The lineup of

Bistrot Loiseau du Morvan

Opposite the Loiseau family’s legendary Côte d’Or restaurant, this handsome 17C edifice is both a supremely comfortable traditional hostelry and a bistro, offering an appetising more casual alternative to its fine dining parent establishment. Here, local and regional recipes take pride of place, such as eggs in a red wine sauce or chicken à la Gaston Gérard. The rotunda dining room, which leads onto a terrace, is the epitome of country chic with old terracotta tiled flooring and a glorious timber ceiling, all of which in an unabashed, full-on Burgundy style.

Modern Cuisine · ★ Michelin

The terrace of this stately home overlooking sprawling grounds and a 17C plane tree features in a novel by French author Michel Houellebecq. Mauritian chef Franco Bowanee crafts fine contemporary cuisine, strewn with discerning exotic touches. He doesn't mess around: his delicious dishes shine the spotlight not only on premium ingredients, but also the vegetables from the estate's kitchen garden. Surrounded by floor-to-ceiling glass, the dining room slots into the surrounding nature perfectly.

Auberge des Chenets

You soon forget the road just outside, as you snuggle up near the fireplace of this pleasant Auberge! The menu stars simple dishes of Burgundian inspiration that are nicely crafted and packed with flavour: slow-cooked egg and snails in a red wine sauce, guinea fowl supreme, puréed potato, braised endive, Bourdaloue tart – and the bill won't break the bank.

How one imagines Sunday lunch in rural France: traditional, expertly crafted food that keeps pace with the seasons. In summer, relax in the flower-decked garden and soak up the sunshine. Beautifully located at the gate to the Morvan regional park.

La Cuisine de la Fontaignotte

Modern Cuisine

This exquisite 17C mansion, whose conservatory and large terrace command a matchless view over the town’s ramparts and the River Armançon, enjoys a premium location in this picture postcard medieval town. The town and its walls may be rich in heritage, but the incisive, fresh cuisine of chef Martin is light years from old school, as the brook trout smoked over vine shoots and beetroot in a salt crust demonstrates. The chef faithfully keeps pace with the seasons, working with farmers from Auxois and Burgundy.

L'Auberge de Guillaume

After assisting Christophe Bacquié at Le Castellet, becoming a Meilleur Ouvrier de France in 2015 and then a Michelin-starred chef at La Bussière, local lad, Guillaume Royer, has at last opened his own place in his native village. In this charming inn, half a kilometre from the peaceful Canal de Bourgogne, he rolls out his talent in a contemporary bistronomic vein using knockout regional produce. Pleasant terrace and quiet garden to the rear.

In the picturesque Auxois region of Burgundy, a Renaissance château provides a historic backdrop for a plush stylish restaurant. The chef signs a gourmet lineup: artichoke and mushroom tartlet with confit egg yolk and a creamy époisses sauce; Corton pigeon roasted whole with raviole of offal, smoked beetroot and a coffee- and miso-laced jus, ending with a dark chocolate soufflé and blackcurrant sorbet extravaganza. Fine dining set menus in the evening, simpler lunchtime deal, and brunch on Saturdays. The guestrooms invite you to unwind as you take in the lake and bucolic grounds, where deer ro
