Both the artichoke cooked two ways on brioche with anchovy sauce and the cod with leek foam and cuttlefish ink, embellished with black truffle and basil oil—sampled on our last visit—were exceptional. Part of the Country House Villadorata resort in the hills outside Noto, this restaurant boasts a delightful setting with the sea as a backdrop, surrounded by gardens which provide many of the vegetables used in the cuisine. Matteo Carnaghi is at the helm in the kitchen, with excellent results and a cuisine is firmly rooted in Sicilian ingredients, offered through two tasting menus of flexible length, with dishes also available à la carte.
