The kitchen changeover at the beginning of 2025 brought into the spotlight the young and talented Trentino chef Andrea De Lillo, who skillfully draws on his extensive experience in top-tier establishments. Together with the owners, who also manage the Hotel Belfiore that houses NIN’s spaces, he has established an ultra-modern and creative cuisine based entirely on local raw materials. It won’t be contradictory to see shiitake mushrooms or wagyu beef served, because these are all local cultivations and farms: the famous Japanese beef, for example, comes from nearby Monte Baldo.
