Séchex Nous
Modern Cuisine · ★ Michelin

On the shores of Lake Geneva, a love story and a fish restaurant in one! Manon Moleins-Plassat (in the dining room) and Lucas Dumelie (in the kitchen) have dropped anchor in the tiny port of Séchex, from whence Manon hails. Her brother Ludovic, a sixth-generation fisherman, continues to cast his nets there. Fish from the lake play first fiddle on the menu: whitefish, pike, trout and crayfish are elevated courtesy of rigorous cooking techniques. The mountainous hinterland also chimes in with its vegetables, herbs and aromatic plants, which are particularly well suited to this light, healthy cui

Frédéric Molina à Forêt Ivre
Creative · ★ Michelin
€€€€
Frédéric and Irene Molina have relocated their fine dining offering to a new spot in the Vallée du Brevon, less than 2km from their restaurant Le Moulin de Léré. Looking out onto the peaks of Les Trois Becs and the mysterious Forêt Ivre with its slanting fir trees, this old farmhouse with its two-hundred-year-old timber frame has a refined, minimalist decor of premium materials, custom-made pale wood furnishings, contemporary lighting and local ceramic tableware. The spacious glass-walled dining area is on the upper floor and affords views of the surrounding countryside and into the open kitch

Take a seat in the majestic dining room of this luxury hotel and admire the Art nouveau frescoes by Gustave Jaulmes. The show continues in your plate, as you tuck into dishes, subtly and precisely crafted with premium ingredients: fish from Lake Geneva (arctic char, perch, crayfish...), Bresse chicken with yellow wine. The chef works with noble produce, delving freely and frequently into the estate’s cottage garden. The exclusive, sophisticated ambience, like the breathtaking view and the attentive service add the final touch to this fine dining experience rich in gourmet memories.

Le Muratore

The Muratore house is named after its former owner, a liquor-maker and confectioner. It stands on a pedestrian street of Évian overlooking an exquisite square with a fountain in its centre. Now a restaurant, it is in the hands of Marc Serres, who crafts wholesome regional fare. The menu is sensibly priced and the à la carte range stars noble ingredients, including fish from the lake, without forgetting a few hearty classics from Lyons. Shaded by a linden tree, the terrace is bliss in summertime.

Ô Flaveurs
Modern Cuisine · ★ Michelin

The epitome of rural France! With its exposed stonework, beams, floorboards and fireplace, so welcome during cold winter evenings, this authentic little 15C castle will delight those of a romantic disposition, as will the mystery menu of chef Jérôme Mamet, who is a stickler when it comes to plating! This inventive and talented chef works only with carefully selected, often organic, ingredients of the highest quality. Delicious terrace.

Njørden
Modern Cuisine, Scandinavian · ★ Michelin
€€€€
Opposite the townhall of a picture postcard village set amidst vineyards, this small inn, which sports an uncluttered Scandinavian vibe, offers seafood- and veggie-centric cuisine. Philippe Deslarzes signs a crisp, modern score, in a bid to showcase the ingredients’ natural essence: Danish langoustines, Vadouvan bisque and red and white beetroot; Scandinavian cod, endives and cloves. Artistic plating, hearty flavours, stylish tableware and flawless service, without forgetting the sommelier’s insightful tips. The chef’s other establishment, the Njørd Café, aims for a more bistronomic slant.

In this little village in the Vallée d'Aulps in the Chablais area, between Thonon and Morzine, what a surprise to find Breton chef Jean-Philippe Lemaire, who has worked abroad as well as in the region, notably at Le Clos des Sens, Le K2 and Le Farçon. Familiar with the Alps, of course, but also with Asia, he will win you over with his subtle, free-spirited cuisine. The dishes may give pride of place to the natural surroundings, but they also draw on the chef's memories of his travels, with nods to his native Brittany (eg churned butter with buckwheat or caramelised milk).
