In summer, you may end up in this cosy chalet at the foot of the mountains by a pond, after a daylong hike through the lovely Jura forests, having worked up a healthy appetite. In winter, kick off your snowshoes and admire the Christmas carol picture. The menu features traditional French cuisine and Jacques Barnachon frequently shines the spotlight on the region, with game in the autumn and prime produce (John-Dory, lobster, fillet of Charolais beef). Jacques is also a mushroom specialist, notably the morel, which is the star of his signature ragoût. Wood dominates in the dining room, which al

In his elegant lair, owner-chef Jérémy Desbraux quietly regales us with satisfying wholesome fare, crafted with textbook precision. Rather than fussy or contrived, everything smacks of crisp, legible regional flavours to the delight of discerning foodies. For example, the appetisers and petits fours use Swiss rice and local honey and the bread is made entirely from flour ground by a local mill. Even the table arts are a nod to the region from a bell jar that pays tribute to Tête de moine cheese to a huge watch case bearing the restaurant’s logo in honour of the local watchmaking tradition. In the family since the 1960s, this inn proposes traditional cuisine that showcases regional produce. Morels take pride of place, as do pike-perch and chicken in vin jaune, without forgetting frogs’ legs, fresh from the restaurant’s pond in season. The self-service distributor of home-made dishes next-door is something of a curiosity.

A few minutes from Bartholdi's Lion de Belfort, Le Pot d'Étain is a treasure trove of culinary gems, thanks to talented chef Philippe Zeiger, who has made his restaurant an absolute must for anyone who loves good food. The chef showcases hearty and delicious French cuisine that he prepares using superb seasonal ingredients, including langoustines, scallops, hare à la royale, turbot and truffles. The desserts also hold their own, particularly the excellent hot soufflé, which comes in a variety of flavours depending on the season. The restaurant also boasts an extensive wine list, and you can lo

A chef with an impressive CV and his wife have brought this old farmhouse to life with considerable panache. Expect meticulous, well-crafted, beautifully plated dishes showcasing marriages of flavours that are spot on. This is cuisine that revisits the classics, drawing on ingredients that are firmly rooted in the region: morels, old Comté cheese, vin jaune, Morteau sausage etc. Pleasant, peaceful terrace.

At the foot of the citadel, this former military riding arena specialises in delicate, flavoursome fare rich in regional twists (such as a mushroom crust cooked in vin jaune or their amazing sliced black pudding). The self-taught chef is a stickler for perfection – as the first and last bite will confirm.

In a former 18C grain store, this imposing vaulted dining room, dotted in contemporary details, is the Besançon HQ of the Bernard Loiseau Group. The menu highlights produce and recipes from Bourgogne-Franche-Comté: mushroom pie, blanquette-style chicken in vin jaune, cabbage stuffed in Morteau sausage… Each dish is painstakingly plated and packed in flavour. A wickedly irresistible dessert trolley winds up this gourmet feast.
