Recently re-opened under new management, this charming restaurant winds its way from room to room until you finally arrive at the palazzo’s old cellars, the jewel in its crown. The cuisine here has quickly made a name for itself, focusing on strong links with regional traditions and showcasing local favourites on a menu full of tempting options, including salumi, local vegetables, pasta dishes, grilled meat options and typical local ingredients such as San Marzano tomatoes. The double “u” in this restaurant’s name is not a mistake but was added with the intention of evoking the flow and sound of water that can heard from afar. Here, chef Angelo Borghese demonstrates his passion for the sea through his delicious, precise and personalised recipes in which the highest quality fish takes centre stage. The escarole and anchovy pizza with colatura mayonnaise is excellent, as is the selection of raw and marinated fish dishes.

The area around Montoro, famous for its cipolla ramata (copper onion), is now also home to a gourmet restaurant thanks to young chef Francesco Cerrato, whose cuisine is inspired by locally sourced ingredients from this inland region as well as fish and seafood from the coast.
