Drawing on his extensive experience in starred restaurants, Mariano Buda rolls out a modern score of classical inspiration dotted with Italian and alpine notes in his partially screened kitchen. The marbled fillet of beef in puff pastry, textures of chard, pistachio and marigolds is emblematic of his spot-on, flavoursome style. The à la carte and vegetarian menus star local produce, polished plating and light sauces. Housed in the swanky Au Club Alpin Hotel, the restaurant commands a stunning view over Champex-Lac and the peaks, that is even more jaw-dropping from the window tables. Before or

This sleek chalet overlooking Verbier serves big-boned, inventive Italian cuisine in a snug, stylishly appointed hotel. The carefully structured lineup stars a top-drawer cast of exceptional ingredients. In addition to artful plating, each dish reveals surgical craftsmanship, lashings of creativity, superlative quality and spot-on marriages of flavours. The eight-course tasting menu can be whittled down to six, even four courses depending on your appetite. We highly recommend the wine pairings, particularly if you opt for the tasting menu. Slick, seamless service.

This restaurant, which has been a culinary landmark for decades, is in the hands of two chefs from the region. Spot-on combinations illustrate their enticing repertory crafted from cherry-picked, primarily local produce. In the evening, we recommend the “Signature” or “Veggie” menu, while the lunchtime score is very sensibly priced. The splendid cheese trolley of well-matured delights is another highlight, all the more so as the sommelier is never far away, ready to introduce you to fascinating wines from local sustainable wineries. A buzzy vibe, a stylish interior and alfresco dining on the t

In the heart of historic Saillon, this stylish restaurant boasts two terraces, one of which overlooks a peaceful pedestrian street. Several menus, including one vegetarian, an à la carte lineup and dishes of the day depict the culinary programme. Examples include a starter of runner beans, potatoes and basil, followed by expertly cooked pollock and a chocolate, sweetcorn and coffee extravaganza to finish. Slick, seamless service, handcrafted tableware and a casual ambience provide the perfect foil for polished Mediterranean fare with Sicilian overtones inspired by regional and seasonal ingredi

Built in the 1860s, this imposing building near the Swiss border has accommodated a hotel for over 160 years. It has since been nicely refurbished, while retaining its name. A young local chef cooks up appetising dishes that pay homage to the terroir: courgette tartare, soft-boiled egg, faisselle mousse; pork, polenta, Alpine harissa. At lunchtime, there is a simpler set menu. The pleasant terrace affords a view of the mountains.
