De Mandemaaker
Contemporary, Seafood
€€
De Mandemaker has plenty of aces up its sleeve, such as a terrace on the inner harbour, the captivating blend of chic and cosiness both indoors and out, and guestrooms across the way. The extensive menu (slightly more limited at lunchtime) highlights the chef's versatility and his predilection for fish. Succulent tournedos with a full-bodied sauce infused with summer truffle and a decadent potato mille-feuille followed by a multi-textured dessert exploring the flavours of a cocktail of Martini and coffee… this cuisine is both playful and full of character. Essential dining when visiting Spaken

Bistrôt Chapeau

€€
Bistrôt Chapeau exudes French elegance: white tablecloths, warm tones, typical chansons playing in the background and a terrace where you can relax. Chef Nicky Quarz cooks here with classic precision and a penchant for dishes that are too often forgotten. No frills and full of flavour. Think homemade wild boar pâté with lively garnishes that provide a nice counterbalance, or juicy guinea fowl stuffed with tartufata and served with soft pommes fondantes and a creamy mushroom sauce, among other things. This cuisine remains true to its roots. And more good news: the full menu is also available fo

The sweets that used to be sold in this establishment dating back to the 1700s have given way to delicacies such as lobster and Venus clams. This new direction is reflected in the artistic photographs hanging on the walls of this cosy, intimate-feeling restaurant. Chef Han showcases his ingredients in cutting-edge dishes drawing on solid French foundations and with the odd creative flourish. Take, for instance, his succulent marbré of goose breast and rillette, with the sweet earthiness of textures of beetroot, combined with vibrant pickled mustard seeds and punchy creamed rocket. Charly de Wijs welcomes his guests in a former factory warehouse that has been converted into a lively bistro with industrial charm. The atmosphere is informal, and the interior is robust and warmly decorated with vintage details. The à la carte menu features dishes in intermediate portions that you can share as you wish. The scallop ceviche with citrus-marinated beetroot, bisque cream and chilli, for example, surprises with its freshness and depth. And how about a creamy espresso parfait with a coffee espuma in which caramel provides sweet power? This story is international and versatile, wit

Host Robert-Jan Nijland and chef Michel van der Kroft prove that one plus one can make three. What was once a fisherman's cottage is now one of the country's top restaurants. The decor is cosy and charming, featuring stylish clean lines, lots of glass and a dominant black aesthetic. Having been given free rein to do his own thing, the chef has come up with a unique culinary style. He can execute the classic Escoffier recipes just as well as anyone. His foie gras and smoked eel terrine served with aged balsamic vinegar and beetroot in various textures is sublime. His ravioli with Queijo da Serr

Hand-cut steak tartare with fine acidity, turbot à la meunière with a beurre blanc cooked in time-honoured tradition and ravioli stuffed with oxtail: these are the kind of classic dishes for which Erik Hendriksen is renowned. At this warm and welcoming restaurant, in an idyllic location by an old lock and close to a small harbour, familiar flavours are given the attention they deserve.

Born and bred in Harderwijk, Yornie van Dijk has taken over the restaurant of his former boss Rik Jansma and made it his own. The interior combines specially commissioned drawings, exposed brick walls and high-end materials. This is a welcoming place with a youthful energy and an open kitchen that immediately draws the eye. Chef Van Dijk makes the nuances of contemporary cuisine his own, with a sure touch when it comes to balancing acidity and seasonings. It is clear that he is a proponent of Nordic Cuisine, a puristic cooking style onto which he puts his own spin. Vegetables and herbs sourced

Spandershoeve

Spandershoeve has been showcasing traditional Indonesian cuisine since 1972. Anita Boerenkamp was the first chef in the Netherlands to put a sophisticated spin on the famous rijsttafel. Her confident take on the fiery and intricate blend of spices was remarkable. The kitchen team honours her legacy. They know, for example, how to roast goat until it is succulent, how to employ soy sauce to powerful effect, and how to add texture with raw and fried onions. This welcoming neighbourhood restaurant is the perfect introduction to Indonesian generosity and hospitality.
