Ciel Bleu

Ciel Bleu lives up to its name. Here, you dine on the top floor of the luxurious Okura Hotel with a spectacular view of the blue sky and the Amsterdam skyline as a backdrop. The modern elegance of the restaurant and the superlative presentation of the dishes are equally pleasing to the eye. Arjan Speelman's cuisine is technically accomplished and creative. The seasoned chef deftly plays with French cooking techniques, Asian seasonings and spices. By focusing on the depth of his sauces, he ensures that each dish packs a punch. His marinated bluefin tuna tartare with yuzu, paired with a horserad

Joris Bijdendijk has put the Rijksmuseum's gem of a restaurant on the map with his highly personal culinary approach, working predominantly with homegrown vegetables spiced with the exotic influences that characterise Dutch cuisine. He whisks his diners away on a unique culinary adventure. Having been completely revamped and done out in natural materials, the interior has a warm feel and creates an even more immersive experience. RIJKS® is a reflection of the bustling city of Amsterdam. The sophistication of the well-considered dishes is immediately striking. With one mind-blowing idea after a

East meets West at this restaurant, where chef Alexander Ioannou spices up familiar flavours with subtle touches of acidity and an interplay of exotic seasonings. This is creative cuisine that packs a punch, but for all the complexity of its flavours, it is very easy to enjoy – just take a look at all the happy faces around you. The chef likes to come to the table to present his signature celeriac dish. You might want to congratulate him on his fabulous creation: He imbues thin slices of celeriac with smoke on the barbecue and combines them with a celeriac cream, a perfectly runny egg and a ro

Ron Gastrobar

Ron Blaauw can safely be called a culinary mastermind. In 2013, the popular chef transformed his two-Michelin-star restaurant into this accessible gastrobar and immediately made it a success. The establishment is urban, colourful and hip. Even a visit to the toilet is an experience here – football commentary can be heard in the men's room, while the ladies are treated to jokes. Chef Blaauw has created different vibes in which you can discover his relaxed gastronomy. There is no room for frills in this gastrobar, but all the more for original combinations and distinctive flavours. Here you can

This restaurant occupies the third floor of a building by architect Jan Wils, who also designed the Olympic Stadium across the street. No doubt Wils would have been proud of this American-style urban brasserie, which feels both grand and intimate. The cocktail bar is delightfully trendy. The cuisine never fails to impress – especially its use of fire. Chef Joris Bijdendijk and his team love to cook with the charcoal grill and traditional ovens, which they handle with great skill. For instance, they pair fluffy deep-fried bara (a Surinamese-Hindustani snack) and crispy veal sweetbreads with a z

Jurgen van der Zalm has made the kitchen at Vinkeles his own. Having spent years here as a sous-chef, honing his classic culinary skills, he now charts his own course, without breaking with the house style: premium-quality ingredients and complex sauces are still the name of the game. For instance, he glazes ultra-fresh turbot with garlic and pairs it with textures of artichoke, mustard seeds and a potato millefeuille. What truly takes the dish to the next level is the smoked lime sauce underpinned by a robust fish fumet. Chef Van der Zalm is a master saucier, who combines a playful approach t

It was at the MICHELIN-starred Bougainville that Chef Dorus Floris and sommelier Lendl Mijnhijmer first crossed paths and the seeds of this partnership were sown. The synergy between them is palpable – in the impeccable service, the lounge-like ambiance of this elegant open-plan restaurant, and especially in the way everything complements the food on your plate. Chef Floris effortlessly experiments with seasonings from around the globe and refreshing nuances. His intricate sauces showcase his exceptional technique.
