Calabrian chef Salvatore Morello brings a breath of fresh air to the city synonymous with gastronomy. Drawing on an international background, he presents a cuisine that weaves together recipes and ingredients from diverse culinary worlds, united by finesse, personality, and a striking cohesion. Exceptional raw materials, occasionally accented by exotic notes, find precise balance in every course. Special mention goes to the bread program: the loaf, crafted from sourdough and minimally refined flours and baked in a cast-iron pot, captivates with its pronounced crust and unexpected lightness. Situated in the beautiful countryside outside Cerreto Guidi, Villa Petriolo is a magnificent Medici residence offering luxurious rooms in a setting of outstanding charm. In addition to the beauty of the villa and its garden, overlooked by the restaurant’s terrace, the location benefits from the property’s delicious home-produced ingredients, such as extra-virgin olive oil, wine, Cinta Senese pork, meat and chicken, produce from the kitchen garden and ancient grains. The kitchen reinterprets these rich ingredients with a modern twist, offering two tasting menus — one of which for vegetarians —

Traditional in atmosphere, starting from the rooms covered with decorations, to the cuisine, obviously from the area: this is the restaurant for those who do not like revisitations and exotic searches, but prefer to be reconfirmed in the classic Parmesan flavours: cured meats, fresh pastas, roasts and grilled meats, in a typical country farmhouse with a large garden and a store selling typical local food products.

At the edge of the city, just off the ring road, this quintessential trattoria features spacious dining rooms where a familial, informal atmosphere prevails, while from the kitchen arrive the pillars of Parmesan tradition, executed at an excellent level: flavorful dishes crafted from predominantly local products. Among the unmissable offerings, the anolini in capon broth, savory and satisfying, as well as the pork cheeks in lemon cremolade with cream of garbanzo beans.

A contemporary trattoria where you can enjoy some of the region’s delicious specialities, all of which are faithfully reproduced with maybe just a hint of modern flavour – this is one of the most interesting restaurants in central Parma! We particularly enjoyed the bomba di riso (stuffed rice pie) with pigeon ragù, as well as the fresh pastas and the roast meat stuffed with roast potatoes.

Just a few kilometres from the city, already enveloped in the tranquillity of the Parma countryside, this trattoria embodies to perfection the spirit of local cooking: a simple yet warm atmosphere, a homey welcome, and dishes that speak of the territory with forthright honesty. The menu revolves around the specialities of Parma, prepared with quality produce and a homely touch that wins one over from the very first mouthful. The tortelli alle erbette, made with an excellent locally sourced fresh ricotta, are not to be missed, a true emblem of the tradition. For those with a sweet tooth, the me

A historical palazzo in the town center has been given new life after its purchase by a local entrepreneurial family, who also bestowed their name upon it. Just steps from the heart of Italy’s famed food valley, it now serves as a refined hospitality venue: the ground floor hosts a bar and bistro, while upstairs are elegant spaces devoted to gourmet cuisine. Tasting menus are available, with dishes also offered à la carte, alongside an extensive and well-curated wine list. The upper floors feature intimate, stylish guest rooms, designed in the same reassuring style that runs throughout the bui

A fairy-tale setting for a property of almost castle-like aspect, originally built as a customs post on the River Po in the fourteenth century. Today Massimo Spigaroli, whose family were once sharecroppers on the surrounding land, is its owner and has transformed the complex into a complete destination: guest rooms, the Hosteria del Maiale bistrot and spaces for private events. Completing the experience are a visit to the Museo del Culatello and a ‘gastrofluvial’ cuisine deeply bound to the traditions of the local area. Among the historic dishes, the frogs’ legs stand out, golden with sweet ga
