This unique restaurant, in the heart of the Sierra de Albarracín mountains, occupies what was once a wool factory, hence its name (“fulling mill” in English) and its location on the banks of the Guadalaviar. The charm of the building is evident, thanks to the preservation of its original structure, and its quiet natural setting with its plethora of waterfalls. In the elegant dining room, furnished in the rustic style of the region with seating for just 18 guests (adding to its exclusive feel) and relaxing views of the countryside from most of its tables, enjoy delicious dishes prepared by Marí
