An interesting modern dining concept. It all kicks off at 7pm when the guests for the evening arrive. At 7.15pm, service begins. There is a single seven-course set menu (with additional amuse-bouche and final course) showcasing a global palate with strong Asian influences and delivering bold, distinct flavours. Plenty of umami and studied technique are the hallmarks of chef Luis Hendricks's cooking – these underpin the entire menu. Then there are the masterful desserts, such as a perfectly balanced black garlic and dark chocolate mousse, which, together with roasted pecan, banana ice cream and
