The menu ranges from classics such as Hirschwirts Gaisburger Marsch (a traditional Swabian beef stew) and Swabian tripe ragout to Mediterranean-influenced dishes such as fried Atlantic sea bream fillet with a white wine sauce on bell peppers and courgettes with risotto.
