La Fleurie
You can really taste Martino Verbruggen's passion and experience in every bite of his dishes. His robust sauces are out of this world. Take, for example, the beautifully reduced veal jus that complements the succulent veal tenderloin and crispy sweetbreads. His cuisine is sophisticated and refined, with occasional international nuances adding an exciting twist. A judicious squeeze of kaffir lime adds a refreshing zing to the seasonal fish tartare. Beer and fire are at the heart of this establishment, whose name translates as "Malt & Wood". Next to the Beerze family brewery, which is steeped in history, there is an American-style bar with a stone pizza oven at the front. The back of the restaurant has a raw industrial feel. The chefs like to work with the Josper charcoal oven, parrilla grill and Oklahoma smoker to infuse their dishes with smoky flavours. Karin Smits is the heart and soul of De Luytervelde. She has been welcoming guests at this converted farmhouse (1912) just outside the city centre since 1992. Diners are smitten with the stylish decor and delightful garden terrace, but the main focus remains, of course, the modern interpretation of classic flavours and the well-curated wine list. The chef will expertly fry a veal sweetbread until golden brown and knock up a robust sauce Périgueux, but he is just as adept at giving venison an exotic twist with five-spice powder.
