This restaurant has become quite the operation over the years, what with its main dining room, Tasting Room, Kitchen Bench, bedrooms, garden and even its own bees. Sat Bains has an unerring commitment to well-sourced produce, both from his own garden and around the British Isles; fresh, snow-white crab is a great example, enhanced by the ingenious accompaniments of dashi jelly and a rich bisque infused with star anise. Whatever the dish, it will be as punchy as it is good looking. You're guided smoothly through the whole experience by the genial, well-versed service team.

This 16th-century former farmhouse sits in a sleepy village close to the Humber Estuary. It’s an area rich in agriculture, so it’s no surprise to find local ingredients to the fore on the surprise tasting menu, be they from regional producers, nearby farms or the long-standing owners’ smallholding where they rear animals and grow veg. The chef's personality shines through in the full-flavoured dishes, from nods to his Yorkshire roots to refined takes on his favourite foods, like chicken tacos and lamb kebab. Sumptuous bedrooms mix classic character with modern comforts.

JÖRO’s relocation to this 300-year-old former mill on the edge of Sheffield has certainly been a labour of love. The building has been smartly converted, with bedrooms available upstairs and an open kitchen in the dining room. The cooking is pure and occasionally playful, with the quality ingredients treated with respect and understanding. Just take the Vale of Mowbray hogget, for example, enhanced by a mint-tinged lamb jus, a bright tomato and chipotle cream, and a vibrant caponata. The excellent service is a real team effort, with every person brimming with enthusiasm.

Alchemilla occupies the red-brick vaulted arches of a Victorian carriage house, yet despite its rustic first impression, it’s a modern place. A living wall and roof garden set the scene for Head Chef Alex Bond's inspired, exciting cooking that utilises sustainably sourced ingredients. As well as injecting plenty of his own personality into the dishes, he has an innate skill for bringing together sweet, sour, salty and citrus elements in wonderful harmony; his aged hogget with roasted lemon, aubergine and black olive is a prime example. The esoteric wine list has a bias towards natural wines.

The Yorkshire larder is well-represented on the menus, with numerous daily specials reflecting what’s best in season. Unfussy, instantly recognisable dishes like dressed crab are elevated thanks to the exceptional ingredients and the kitchen's keen sense of balance. The charming team ensure everyone is looked after with a smile, and smart bedrooms add a luxurious edge.

Set in a quiet area of the city, this attractive Arts and Crafts building is little sister to the Black Swan in Oldstead and shares its ethos of seasonality and sustainability. Tasting menus evolve naturally according to the availability of produce – which originates from their kitchen garden, small regional suppliers and chef-owner Tommy Banks’ parents’ farm. Creative, modern dishes are carefully prepared and deceptively simple to look at, yet offer great refinement and depth of flavour. There’s plenty of choice on the well-chosen wine list, with everything available by the glass.

The name (almost) says it all here: it is indeed an endearing neighbourhood bistro, but Norman is not in fact the owner – instead, it’s the name of both the owner’s dog and his grandfather. The sharing plates offer great value and have a playful streak, as evidenced by the pig's cheek glazed in Henderson's Relish, the cult condiment from nearby Sheffield. The wine list is concise but, refreshingly, it’s all available by the glass – and the local ales are understandably popular.

Being hidden down an alleyway and up some stairs in the centre of Nottingham, you’ll need to follow your map closely to find this rustic restaurant in a lovely period building – think exposed brickwork, timbers and dried flowers hanging on the wall. Cooking-wise it’s all about small plates, with three to four per person about right; these dishes show off recognisable flavour combinations executed with aplomb, like ham fritters with the eponymous piccalilli. The wine list is concise but carefully curated, with quality choices at a fair price.

Around four dishes per person is about right, with the 'gambas a la plancha' well worth an order. The ‘Express’ menu available on midweek early evenings represents great value.

The Japanese cooking revolves around small plates and skewers, cooked over a charcoal grill with consummate skill. Bright, authentic and generous, each dish is a joy to eat and sensibly priced too. If you're coming for lunch, get here early as they don't take bookings and the lunchtime offer is phenomenally good value. Efficient service, a dynamic atmosphere and a courtyard terrace all add to the already considerable appeal.

This bright, lively restaurant is still one of the hottest tickets in town, and it's easy to see why. Located just up the road from Micklegate Bar – a 12th-century gateway to the city – its name comes from the Japanese word meaning ‘small amount’, referencing the menu's sharing-plates format. Six or seven dishes is about right between two, with each one incorporating bold, precisely balanced flavours with real skill. Indian cuisine has a palpable influence on the cooking, but so does the rest of the world – with dishes like masala monkfish and the superb hogget 'shawarma'.

Set over two floors of a former pub, this colourfully decorated, family-run restaurant offers interesting, original Indian vegetarian cooking inspired by the owners' Gujarati heritage. Dishes such as the 'Chole' chickpea curry are substantial in both size and flavour and the spicing is well-judged. The bread selection stands out, with excellent naan and rotli.

Slawomir Mikolajczyk from The Hope & Anchor in South Ferriby has given this town centre spot a top-to-toe refurbishment and it’s a place you’ll quickly fall in love with. The smart, wood-clad interior features shelves bursting with jam, pickles and preserves; in winter you’ll likely find some in your meal, such as pear and beetroot chutney with creamy duck liver parfait. The cooking as a whole is overtly seasonal and strives for a nose-to-tail approach, while Mikolajczyk’s Polish heritage comes into play too, including his grandmother’s sauerkraut recipe.

With a history dating back to 1846, this delightful stone-built former vicarage is situated in a semi-rural spot on the edge of the city. Two fixed-price menus – go for the 'Prestige' option if you want the full experience – offer ambitious, well-constructed dishes delivering assured flavours from high-quality ingredients. Roe deer from the Balmoral estate is a great example, providing a wonderful gamey flavour and cooked to a perfect tenderness. The grand-looking house is surrounded by mature grounds that are worth exploring.

For his latest venture, experienced chef Tom Lawson has taken over the titular boutique hotel, and within it sits this welcoming restaurant. Bright, funky wallpaper adds a splash of colour to the room, while a large bureau is filled with Lawson’s own favourite cookery books. His set seasonal menu changes regularly but will likely include his version of cauliflower cheese that nods to his ‘Grandma B’. Elsewhere, look out for high-quality produce such as snow-white Cornish plaice with a terrific beurre blanc. Service comes from a friendly and confident team.

There's a characterful, rustic-chic vibe to this first-floor restaurant, courtesy of its exposed beams and brickwork. Real pride and enthusiasm is poured into both the cooking and the service, with a tasting menu composed of modern, richly flavoured dishes based on high-quality produce like Nordic halibut and Creedy Carver duck. A shorter set menu is served at certain times, while the 'Kitchen Bench' gives you a ringside seat in front of the pass. Don’t be put off by its location next to the cement works, as this rustic, nautically themed pub with Humber views is definitely worth the visit. Meats are aged in a glass-fronted drying cabinet and cooked in the Josper oven; some are designed for sharing and they even offer Wagyu. Bedrooms are modern and some have estuary views.
