The kitchen is run under the auspices of experienced operator Andrew Sheridan and pairs the local produce with occasional East Asian influences, such as Japanese milk bread. Herbs, fruit and vegetables are grown on the estate, then crafted into seasonally minded plates that incorporate more produce from the local area. The wine list offers some interesting English and local Welsh wines.

Owned by the same people as nearby country manor Palé Hall, this immaculate, whitewashed roadside inn is overflowing with motorsport and classic car memorabilia from the owner’s collection. The cooking mixes modern British fare with prime cuts from the grill and Bryntiron Classics like a seasonally changing pie and mash. To start, look out for the wonderful lamb croquettes with fragrant mint sauce and piquant gremolata gel. Service is relaxed and friendly, while the comfortable bedrooms are named after Snowdonia peaks.

Nestled in a lush valley bordered by the Black Mountains, this former drovers' inn is separated from Hay-on-Wye by a six-mile single-track road. It retains a homely charm, boasting flagstone floors, slate walls and open fires. There’s a Japanese influence throughout the harmoniously flavoured dishes, including ingredients like furikake, koji and yuzu, as well as a sake pairing.
