Cornelia Fischer, who heads up the kitchen at the fine dining restaurant of the splendid Althoff Seehotel Überfahrt, is by no means a rookie when it comes to running a kitchen. Most recently head chef at Zur Schwane in Volkach, she is now showcasing her contemporary take on classic cuisine here at Überfahrt. Excellent ingredients go into the two four-course set menus, one of which is vegetarian. The fresh, tenderly cooked Breton langoustine with delicious braised fennel and a classic shellfish and orange sauce is one outstanding example.
