It is also an apt description of the modern-inspired Austrian and regional fare served here, which ranges from Backhendl (breaded fried chicken) with potato and cucumber salad and lingonberries to sheatfish fillet with lardo, chamomile butter broth, blini and wild broccoli. The four-course "Michaels Menü" comes highly recommended, but the extensive à la carte selection of traditional dishes and tavern classics is also tempting. This restaurant overlooking Salzburg boasts a wonderful location and stunning views. The atmosphere in the pretty wood-panelled dining area is cosy. The cuisine is rooted in the region but also draws on international influences, with a house speciality of Zitronen-Rahm-Herz vom Milchkalb (milk-fed calf's heart in a creamy lemon sauce) featured alongside dishes such as venison yellow curry served with spiced rice.
