The cooking itself is a showcase for Irish produce, such as fine lamb from The Comeragh Mountains served with a punchy black olive ketchup. Foliage hangs from the ceiling, while a drawing of a favela pays homage to where Chef Viktor Silva grew up; the restaurant’s name, Amai, is a tribute to the women who raised him.
