The cooking takes the form of a surprise menu, with a hand-drawn bookmark picturing some of the ingredients the only hint at what is to come. The skill of the kitchen is most evident in dishes that extract wonderful flavours from seemingly basic ingredients, like kohlrabi with goat's curd.

There’s a lovely blend of the old and the new at this former 18th-century coaching inn. Original features from beams to brickwork sit side by side with modern comforts and contemporary chic, all united by a lovely rustic style. The menu contains some flashes of Scottish pride, largely in the quality seasonal produce fashioned into fresh-tasting dishes such as North Sea crab with cucumber, apple and chives. Comfortable boutique bedrooms are available, making a glass of single malt whisky in the cosy bar all the more appealing.

This long-standing, passionately run restaurant never stands still, always investing and evolving over time. It’s still very much a family concern, with Garry Watson alone in the kitchen and his mother Maria handling the service with aplomb. There’s a modern feel to both the décor and the cooking, with the latter proving colourful and technically accomplished. Dishes really shine in their use of the Scottish larder, like local lamb with seasonal girolles. An interesting wine list and five bedrooms complete the picture.
