Working with local growers and often using heritage varieties, the chef creates an array of dishes, making the most of every single part of his ingredient in order to reduce food waste. His elegant presentations and intense flavours are sure to win you over, even if you’re not vegetarian. Attentive, welcoming and friendly service completes the picture.

At Nina Trulli Resort, nestled in one of the most enchanting areas of the Puglian countryside, among dry stone walls and typical vegetation, you can reconnect with nature. Walking through the restaurant's gardens and orchards is an inspiring experience. The focus on plant-based elements is also reflected in the kitchen: there are two tasting menus – one entirely green, while the other, despite including animal products, also highlights vegetables as the main feature.
