It's equal parts butcher shop and restaurant, and their whole animal butchery mindset is reflected on the menu. This beloved locals' haunt is tucked into downtown Chattanooga, and Easy Bistro is just that. Comfortable but unfussy, this spot from Erik and Amanda Niel has been around for more than two decades. They open early with oyster hour, and it's always a hit. The menu is American at heart, with oysters and small plates, pasta, meat and side dishes, all created with a seasonal mindset. Tagliatelle with Florida rock shrimp and bottarga in a lemon butter sauce is given a boost of texture courtesy of Appalachian rye breadcrumbs, while pot de creme or ricotta doughnuts are worthy desserts. .
