In this modern restaurant, located along a pedestrian street in the centre of Teruel’s old quarter, you will find a modern proposal with some touches of fusion. The extensive à la carte, which basically revolves around two premium products, Balfegó tuna and Wagyu beef (the cattle are raised locally on the Mudéjar Wagyu farm), is supported by a tasting menu called Temático de Atún (through a variety of hot and cold dishes, you can discover the different types of cuts). Here they take great care in the staging!

Yain is a must for cod-lovers, featuring an à la carte with “media-ración” options alongside many other cod-inspired dishes such as cod with sea urchin cream and seafood spaghetti; cod gratin with Jiloca saffron, tomatoes and orange confit; cod with cauliflower cream and fried pancetta; and grilled cod with curried lentils. This is complemented by two tasting menus (Esencia and Epicure) requiring advance booking, and one “executive” menu only available at lunchtime midweek.

Run by a young couple and... gaining more and more fans in the mountains of Cuenca every day! Here, always with a modern approach that makes the most of seasonal products, everything revolves around two menus, a fixed menu called Fuentelgato and another called Carta Blanca that varies in the number of dishes, ingredients and prices, since it is aimed, as they themselves say, at those who like to enjoy themselves the most.

Completely surrounded by nature, in the heart of the Serranía de Cuenca and opposite the turn-off that takes us to the source of the Cuervo river, this rustic restaurant is perfect if you are looking for a little disconnection, or the warmth of the firewood in winter. They offer traditional cuisine that does everything possible to make the most of the surroundings, with good game meats and mushrooms in season (we loved their Revuelto de boletus y perrechicos).
