At this restaurant, Ariel Hagen, a young and friendly chef who, despite his name, hails from Florence, divides his time between the open-view kitchen and the tables in the dining room, where he happily explains dishes to guests and shares his enthusiasm for sustainability. His dishes are showcased on tasting menus but can also be chosen individually à la carte style from either menu depending on your preference. Among the desserts, don’t miss the Caterina De' Medici’s rose, a modern version of the traditional Florentine “zuccotto” cake with a beautiful combination of milk and Alkermes liqueur.

In the San Niccolò district, in the heart of Oltrarno, there is a decidedly unusual restaurant. You won't find yourself occupying the usual kind of seating here, as most guests dine on tall stools at a long counter, rather like in a sushi bar. The atmosphere evokes the Far East but the recipes here are typically Tuscan: simple, well-executed dishes, listed on a blackboard that changes with the seasons and according to the chef's inspiration. The menu ranges from oven-baked courgettes stuffed with meat to pici pasta with ricotta and fresh tomato pesto, from “ribollita” to “peposo”, and stuffed

Federico at the stove and Chiara, pastry chef and the soul of the welcome, have brought new life to a long-established local restaurant, transforming it into a modern expression of Tuscan cooking. The menu, varied and stimulating, features dishes such as the raviolo filled with Parmigiano cream from Red Cows, served with chanterelles and onions – intense and technically accomplished – as well as their intriguing take on tiramisù, given an added dimension by a secret touch of tobacco. Over the years, the wine list has grown considerably, reflecting the deep passion of both proprietors; the bott

At the gates of Florence, at the precise point where the city dissolves into the green of the countryside, Bibe welcomes guests beneath the leafy canopy of its summer terrace and within the warm interiors of a trattoria safeguarding over one hundred and fifty years of history, now in the hands of the sixth generation. Here, Tuscan cuisine remains the absolute protagonist: artisanal cured meats, traditional crostini, pici al ragù, and iconic dishes such as beef peposo. Not to be missed are the fried or grilled chicken and, for devotees, a fiorentina that interprets the classic canons in the mos

Just beyond Porta Romana, one finds an intimate dining room with few covers – advance booking is strongly advised – where the restaurant wins one over immediately through its style: a small space of considerable personality, made all the more appealing by rustic details set off by generous and carefully tended floral arrangements. A portion of the ingredients comes directly from their own farm, Podere 39, a guarantee of freshness and identity. The menu alternates between meat and fish, a well-judged balance that draws out the quality of the produce and a cooking of authentic and unaffected cha
