Galician lobster awakening on the beaches of Goa, drunk crabs partying in Jerez, the Minutejo del Agus... The hedonistic cuisine of Dabiz Muñoz is fun and irreverent in many details, and breaks the barriers of the gastronomic avant-garde to enter a highly personal dreamlike plane, inviting the diner to live a roller coaster of emotions. In his striking establishment they serve a unique tasting menu, called ‘The Kitchen of the Flying Pigs’, which takes you on a spectacular journey through the different cuisines of the world, with special emphasis on Asian fusion but with the regular use of Spani

A unique, surprising and somewhat eclectic restaurant which, despite its young age, clearly demonstrates the chef’s passion for cooking. In the kitchen, chef Elena García conjures up a contemporary, fusion-inspired à la carte that introduces cooking from different parts of the world to the palate, from the recipes of Latin America to the sublime tastes of Spanish cuisine and the intense flavours of Asia. Media-raciones, plates for sharing and highly interesting dishes that don’t feature on the menu are also available. One dish that we enjoyed in particular was the mussels with a green curry sa

This restaurant is somewhat reminiscent of a clandestine dining space, and as such a meal here is quite the experience, where the team in the kitchen play ingeniously with smoky flavours and aromas without ever overwhelming the palate. Located in the Hyatt Regency Hesperia Madrid, Smoked Room has its own entrance and views itself as a highly exclusive dining space which is separate from the Leña Madrid restaurant and has its own valet parking service. The aesthetically pleasing dining area has an intimate, meticulous feel and features a striking Japanese-style bar facing the kitchen as well as

In the centre of La Granja, opposite the post office and just a few minutes' walk from both the Royal Palace and its beautiful gardens. Its name (translation, The Foundry) is not a trivial detail, as it is located inside a building with a long history that provided both the Royal Palace and the old hospital with its plumbing. Today, after some great interior design work, it is set out with several spaces of unique ruggedness: the bar, the main dining room where the forge used to be, the terrace-patio of the infirmary... What does it offer? À la carte service (we particularly liked the oxtail r

The Sandoval brothers (with Mario in the kitchen, Diego at the head of the dining room and Rafael as sommelier) are, without a doubt, three great aces of Spanish hospitality. The magnificent restaurant, which covers an area of 1,100 m², elevates the experience by being laid out in stages that allow you to multiply the sensations, with stops at its colourful English-style bar, in the small room dedicated to The Macallan whiskies, in the spectacular wine cellar (it even has a 'sacristy' where sherry is poured with a venencia) and, before moving on to the dining room, a final aperitif in the kitc

If you enjoy Japanese cuisine, this is one of those places that is a must given its focus on presentation and the innovative touch that they add to its dishes (over 35 different courses). Chef Steven Wu, who trained in restaurants in both Tokyo and Kyoto, offers guests his surprise Omakase menu which is the only option here. His Kaiseki-style cooking places full emphasis on the seasonality of ingredients and a respect for tradition, replicating the five types of time-honoured preparation and cooking methods to ensure the perfect harmony between visual and tasting sensations. A contemporary restaurant with an open-view kitchen, two counters and a Japanese ambience that is far from lacking in personality. Its meticulous, constantly evolving cuisine could be described by quoting the Greek philosopher Heracles: “No man ever steps in the same river twice”. In his restaurant, which shares the nickname given to him by his grandfather when he was a boy (“Hugochan”, or “little Hugo”), chef Hugo Muñoz conjures up Japanese cuisine (on an à la carte and a personalised Omakase menu) in which seasonal ingredients take centre stage, incorporating enjoyable influences from other

Haute cuisine in an exclusive setting? Here you can savour the culinary creations of renowned chef Ramón Freixa, who describes himself as Catalan but with a strong Madrid influence! With this luxurious establishment in the heart of the Salamanca district, the chef has taken a step further by diversifying his offering with two concepts that seek to satisfy different audiences. Atelier, a kind of clandestine speakeasy within the larger Tradición, has guests sit at a single U-shaped table, allowing the chef to come and go from the open kitchen and interact constantly with the customers (only 10 d
