The most striking thing about this restaurant housed in an industrial loft in the Salesas district of the city is how it embodies Vitoria-born chef Diego Guerrero's determination to be free to create, to surprise and to break down the barriers around our personal comfort zones. The high-ceilinged interior has a relaxed feel with its exposed brick walls, retro design features, internal patio and an open-view kitchen that maximises the connection between the chefs and their customers. There’s also an annexe (DSPOT Studio & Events) dedicated to creativity, research and event planning. Thanks to h

Savour Japanese cuisine in this exclusive restaurant bearing the hallmark of famous sommelier Marcos Granda, where the full focus is on enjoying the experience without worrying about the time (“toki” in Japanese). In this intimate and exclusive setting centred around a single sushi bar that is designed to personalise the guest experience to the full (Toki only has six seats!), chef Tadayoshi Teddy Motoa guides us on a magnificent journey through the history and evolution of Japanese cooking. His tasting menu shows us how the preparation of nigiri has changed over time (especially in the prepar

Displaying an elegant avant-garde aesthetic, this is a truly unique space... on the top floor of a nineteenth-century building! Here, where there is also a spectacular terrace, you can enjoy a culinary experience in the form of four menus, all with wine pairing options: Esencia laborables (available Thursday and Friday at lunchtime), Esencia (evenings and Saturdays, with the possibility of adding further dishes), the so-called Madrid, Madrid, Madrid and, finally, the so-called Gran Madrid. Chef Paco Roncero, who has an unwavering enthusiasm for olive oil, demonstrates his full creativity in his

The Sandoval brothers (with Mario in the kitchen, Diego at the head of the dining room and Rafael as sommelier) are, without a doubt, three great aces of Spanish hospitality. The magnificent restaurant, which covers an area of 1,100 m², elevates the experience by being laid out in stages that allow you to multiply the sensations, with stops at its colourful English-style bar, in the small room dedicated to The Macallan whiskies, in the spectacular wine cellar (it even has a 'sacristy' where sherry is poured with a venencia) and, before moving on to the dining room, a final aperitif in the kitc

It was clear that Gofio’s cuisine needed a change of scenery and a larger space in which to give full rein to the cuisine of the Canary Islands, and at first glance it seems to have worked! The new premises, located in a street parallel to the ever-busy and bustling Gran Vía, is laid out on two floors with a private space at street level and the main dining room in the basement, in the style of a modern bistro with an open kitchen. The Tenerife-born chef at the helm, Safe Cruz, showcases the traditional flavours of the islands from a creative perspective on three tasting menus (Gofio Express, C

A restaurant with an industrial vibe in the heart of the city’s Chueca district, featuring an open-view kitchen impressively and enthusiastically run by Juan D'Onofrio, a young Argentinian-born chef who is very happy with his life in Madrid. The aim of the contemporary cuisine here is to showcase the full nuances of the Mediterranean, to which the chef adds interesting Argentinian influences, with a strong focus on fire and the grill (all dishes pass over the coals or are smoked), and the use of aged fish and meat in which every flavour is emphasised. The name of this restaurant located opposite the Ministry for the Interior is an equestrian nod to the legendary Jockey, a famous name in the history of Madrid gastronomy, that once occupied the premises. In essence, and despite the more modern look, Saddle replicates the philosophy and excellence of luxury restaurants from days gone by, hence the impeccable service and levels of comfort which enhance superb contemporary cuisine that is built around classic recipes. The overall ambience is one of space, light and elegance, and includes several private rooms plus an inner garden. The classic-con

This restaurant is somewhat reminiscent of a clandestine dining space, and as such a meal here is quite the experience, where the team in the kitchen play ingeniously with smoky flavours and aromas without ever overwhelming the palate. Located in the Hyatt Regency Hesperia Madrid, Smoked Room has its own entrance and views itself as a highly exclusive dining space which is separate from the Leña Madrid restaurant and has its own valet parking service. The aesthetically pleasing dining area has an intimate, meticulous feel and features a striking Japanese-style bar facing the kitchen as well as
