French Contemporary, Creative · ★ Michelin

Now in the capable hands of Julien Ayer, this stalwart of the Fribourg dining scene, whose stylish interior bears the hallmark of Mario Botta, is embarking on a new chapter of its history. Chef Victor Moriez (stints at Crissier and Rougemont) orchestrates a modern French score. Standouts include exquisite sauces, like his bitter orange, marigold and scallop sauce, and an amazing coffee-laced zander dish. Premium produce takes the limelight in creative recipes, including enticing vegetarian options on request. Slick service, inventive alcohol-free pairings and a high-flying wine cellar. Upstair

In this 19C mansion in Bourguillon, Romain Paillereau signs supremely delicate cuisine. The chef cherry-picks his ingredients, crafting them into outstanding dishes such as leeks confit in orange or Atlantic cod with sea urchin and lovage. We fell in love with his unorthodox work with Chappuis pork, mint, shellfish and lemon. Gutsy sauces and stocks reveal expressive flavours, enhanced by a wine list that slaloms between Switzerland and France. The interior errs towards modern downstairs and historic upstairs, the service is spot on, while the terrace shaded by plane trees adds a final flouris

Courtesy of wainscoting, crisp white tablecloths and a sprinkling of stylish modern details, this inn is a treat for the eye. The characterful auberge, located in the picturesque village of Villarepos above Lake Morat, is the epitome of a good food establishment. The culinary lineup stars gutsy flavours, regional produce and virtuoso technique: Bresse royal pigeon, creamy polenta, market veggies; calf sweetbread and morels in a small casserole dish, apple financiers (small cakes) with almond nougatine and Tahitian vanilla ice cream. Each dish is a festival of soul-warming authenticity and Chri

The opulent interior (a former apartment) is decorated with numerous works of art: paintings, photos, sculptures etc.

Established in the historic town, the smart, understated interior decked in works of art is always a treat for the eye. The enthusiastic kitchen team rolls out a seasonal, creative score crafted from fresh produce. The menus change monthly: the lunchtime lineup is entitled ‘Inspiration’ and ‘Eclosion des sens’ in the evening. The culinary slant is purebred classical, served by an on-the-ball front-of-house team, all of which to the delight of a discerning business clientele. Splendid wine list, food-wine pairing evenings and a lounge with a cigar cellar are some of this establishment’s other d

At this rather grand establishment with two dining spaces, GastStube and GnussStube, delicious regional and seasonal food is served, including vegetarian options. You can dine à la carte or opt for a set menu; the "MundArt-Gourmetmenü" has to be ordered in advance. At lunchtime, a shorter à la carte selection, set menus and other daily specials are available. Another highlight: barbecued specialities from the Big Green Egg. Ingredients are sourced as locally as possible. There is a decent wine list with a focus on Swiss labels. The waitstaff are friendly, attentive and professional.

Whether you are seated at a bare or beautifully set table, in this listed former cheese dairy, the dedicated hosts serve high-quality international and regional cuisine that is not only a hit with the locals. Tip: From Tuesdays to Fridays, an inexpensive lunch is served. Incidentally, the building is located in the heart of the pretty old town – perfect for a stroll!

Chef Maxime Arnold creatively combines fresh regional ingredients in dishes such as beef tartare with black garlic, porcini carpaccio and preserved lemon focaccia. The atmosphere and decor reflect a love of music, compounding the charm of this already cosy setting. In summer, the small terrace is the perfect for a tasty tipple, whether a non-alcoholic cocktail or a glass of wine from the exclusively Swiss selection.
