Montia

If you’re keen to eat in a unique setting and somewhere with its own philosophy, Montia (a restaurant where the surrounding mountain landscapes provide the cornerstone for its cuisine) could be the place. It boasts a rustic-contemporary ambience which could not be more welcoming, featuring attractive natural wood tables adorned with ‘inlaid cracks’ and an open-view kitchen between the two dining rooms (one by the entrance with a fireplace, the other overlooking a small garden). Chef Daniel Ochoa, who can constantly be seen serving and explaining dishes, sees himself as both a farmer and forager

In the centre of La Granja, opposite the post office and just a few minutes' walk from both the Royal Palace and its beautiful gardens. Its name (translation, The Foundry) is not a trivial detail, as it is located inside a building with a long history that provided both the Royal Palace and the old hospital with its plumbing. Today, after some great interior design work, it is set out with several spaces of unique ruggedness: the bar, the main dining room where the forge used to be, the terrace-patio of the infirmary... What does it offer? À la carte service (we particularly liked the oxtail r

Occupying a townhouse in the mountains around Madrid, this restaurant features a patio-terrace at the entrance and a rustic and unpretentious bistro-style interior. Choose between a concise à la carte (including “raciones”, half-portions, and even quarter-portions for some dishes) with no little creativity and a strong focus on dishes designed sharing. These dishes change regularly (on this visit we thoroughly enjoyed the red tuna with a pepper-flavoured butter, and the succulent meatballs made from 7-year -old ox from Buitrago de Lozoya) and are usually based around ingredients sourced locall

Local, ecologically minded ingredients, a focus on a zero-waste philosophy, artisanally produced crockery and support for local small-scale producers are all key here. In this restaurant, which occupies an impressively refurbished 200-year-old warehouse previously used to store flour, the team works according to a single mantra: 'cooking the past from the present, but with an eye on the future'. Fronted by Ávila-born chef Carlos Casillas, the restaurant features a kitchen visible from the dining room and boasts superb views of the city’s walls from the opposite bank of the River Adaja. The eponymous owner-chef, who amazed everyone by leaving the world of Formula 1 racing (in which he worked as a journalist) to return to his roots and take over the former family bar, demonstrates ambition, excellent technique and a strong desire to surprise. In this attractive restaurant, with its playful mix of the rustic and modern, Manu Franco focuses on the flavours of the Sierra de Guadarrama mountains, locally sourced meat, aromatic plants (such as thyme and lavender) that he and his team pick every week, and vegetables, all of which are showcased on a tasting menu entitled, called Capri

This restaurant, located along a major ring road, features a spacious tapas bar, a modern main dining room, plus a private space in the basement. Here, owner-chef Óscar Hernando’s personality shines through as he welcomes his guests personally before presenting his contemporary à la carte on which you’ll find classic local dishes such as butter beans from Real Sitio, lamb roasted over vine shoots, and "Cochinillo de Segovia" (roast suckling pig) - the last two dishes listed need to be pre-ordered. Other options include a midweek lunch menu, plus a tasting menu. The restaurant also has its own

The sense of space and attractive Castilian-style decor in this “asador”-style restaurant come as a pleasant surprise in what is one of the city’s classic dining institutions. Without a shadow of a doubt, the signature dish here is the traditionally cooked roast suckling pig reared on the family farm (Agrocorte Gourmet). The extensive, traditionally inspired à la carte, is also enhanced by seasonal dishes (pumpkin, leeks, and game such as wild boar and venison) and complemented by the Nuestra Cocina Segoviana tasting menu, with the icing on the cake provided by the superbly innovative Pago de

Occupying the former church of the Convento de las Oblatas, the restaurant has been tastefully and elegantly updated to combine the historic structural elements with the most modern aesthetic details. Here, always with integrity and a high level of technical ability, they are committed to local produce, with innovative dishes based on tradition that only reach the diner through two set menus (Esencia and Gran Manú).
