Max & Pina have set up shop on Place Baudouin 1er in a tastefully refurbished town house dripping in understated glamour and sporting a suitably tasteful colour scheme. The couple works with a talented youthful chef, Julien Hauspie, who prefers to work with local produce while rolling out his experience gleaned in worldclass establishments at home and abroad. The chef’s know-how can be tasted in the beurre blanc that flanks seabass or in his way with carrots, which he might pair with a béarnaise sauce and tarragon and lemon oil, also demonstrating his creative side and fun-loving personality.
