- To keep each visit feeling fresh, there are no standard dishes. Western vegetables are also woven into the cooking as part of that approach. Tsukuri is given an extra twist through techniques such as curing with kelp and soy marination, while fish and meat dishes may draw inspiration from Western cooking.
