Iván Cerdeño

Modern Cuisine · ★★ Michelin

€€€€

At the historic Cigarral del Ángel (a “cigarral” is a typical Toledo-style country house), set in lush gardens on the banks of the Tagus, guests can savour the unusual cuisine of chef Iván Cerdeño, who creates dishes based on memories from the past and seasonality. In them, he showcases the finest ingredients from La Mancha, the distinctive flavours of game from the Montes de Toledo, and colourful produce from local vegetable gardens. He also takes inspiration from the different cultures that have left their legacy here, as well as from the distant seas around the Iberian Peninsula. Pickles, s

Chef Carlos Maldonado knows no limits and it is this which characterises his cooking, which is firmly steeped in the flavours and ingredients of La Mancha but which is also open to influences from around the world, as witnessed by the twinning between his beloved Talavera de la Reina and Puebla (Mexico). The restaurant, which could almost pass unnoticed because of its discreet façade, boasts a classic-contemporary decor in varying tones of white, plus an adjoining dining room with curtains hanging from the ceiling that add a more intimate feel to the tables. His tasting menus (Básico and Hecho

El Bohío

Modern Cuisine · ★ Michelin

A restaurant that has managed to adapt with the times to the delight of its guests. Despite the bright, renovated new look and cuisine that is more in keeping with contemporary trends, it still retains the informal character of the early roadside “mesón” first opened by grandmother Valentina and whose name recalls her Cuban roots. It is impossible to talk about El Bohío without mentioning celebrity chef Pepe Rodríguez, who champions the DNA of this area by highlighting the culinary legacy of La Mancha, while at the same time adapting its flavours and ingredients to the present day in line with

La Casa de Manolo Franco

The eponymous owner-chef, who amazed everyone by leaving the world of Formula 1 racing (in which he worked as a journalist) to return to his roots and take over the former family bar, demonstrates ambition, excellent technique and a strong desire to surprise. In this attractive restaurant, with its playful mix of the rustic and modern, Manu Franco focuses on the flavours of the Sierra de Guadarrama mountains, locally sourced meat, aromatic plants (such as thyme and lavender) that he and his team pick every week, and vegetables, all of which are showcased on a tasting menu entitled, called Capri

Montia

Modern Cuisine · ★ Michelin

If you’re keen to eat in a unique setting and somewhere with its own philosophy, Montia (a restaurant where the surrounding mountain landscapes provide the cornerstone for its cuisine) could be the place. It boasts a rustic-contemporary ambience which could not be more welcoming, featuring attractive natural wood tables adorned with ‘inlaid cracks’ and an open-view kitchen between the two dining rooms (one by the entrance with a fireplace, the other overlooking a small garden). Chef Daniel Ochoa, who can constantly be seen serving and explaining dishes, sees himself as both a farmer and forager

Modern Cuisine · ★ Michelin

This restaurant, located at the entrance to the Monte Alina residential area, surprises with a new format after its relocation from Illescas (Toledo). While the upper floor features the gastronomic space itself, with its meticulous layout and open kitchen, the lower floor and terrace are home to another establishment (Aleño Brassafina) that follows the same theme but with a much more modest and informal approach. The tandem of chefs at the helm, Víctor Infantes and Saúl González, continue to extol the virtues of this contemporary La Mancha cuisine of grilled meats and marinades that has won th

Galician lobster awakening on the beaches of Goa, drunk crabs partying in Jerez, the Minutejo del Agus... The hedonistic cuisine of Dabiz Muñoz is fun and irreverent in many details, and breaks the barriers of the gastronomic avant-garde to enter a highly personal dreamlike plane, inviting the diner to live a roller coaster of emotions. In his striking establishment they serve a unique tasting menu, called ‘The Kitchen of the Flying Pigs’, which takes you on a spectacular journey through the different cuisines of the world, with special emphasis on Asian fusion but with the regular use of Spani

Displaying an elegant avant-garde aesthetic, this is a truly unique space... on the top floor of a nineteenth-century building! Here, where there is also a spectacular terrace, you can enjoy a culinary experience in the form of four menus, all with wine pairing options: Esencia laborables (available Thursday and Friday at lunchtime), Esencia (evenings and Saturdays, with the possibility of adding further dishes), the so-called Madrid, Madrid, Madrid and, finally, the so-called Gran Madrid.
