Sorekara

Japanese, Contemporary · ★★ Michelin

$$$$

In a world of uniformity, Sorekara proudly forges its own path. This Baldwin Park restaurant is unlike anywhere else you've been, offering a surprising and delightful culinary journey that revels in turning expectations on their head. Chef/owner William Shen's tasting menu highlights Japan's 72 micro seasons with highly original dishes infused with a sense of whimsy (note the course designed to mimic a convenience store snack run or the "nigiri"). Whether it's madai sporting a distinctive riff on tradition or a deeply savory bowl of kegani sourced from Hokkaido, there is an elegance and refine

Chef Tung Phan's Lake Baldwin restaurant is boldly sleek with elegant touches (think wood accents and beautiful lighting). Seats at the counter feature the multicourse Vietnamese French tasting menu, while booths offer an abbreviated version. Rooted in French techniques, Vietnamese flavors are given a refined twist here. Phở hà nội is inspired by northern-style pho, albeit this iteration features wagyu tartare, savory broth and a doughnut-style pastry. Salmon over king trumpet noodles in a tamarind and pineapple sauce is creative, but the best may be saved for last. Bánh Đậu Đỏ is highly creat

Chef Ryan Ratino's lauded D.C. restaurant, Jônt, is more than just the inspiration for this offshoot. This Winter Park restaurant echoes that spirit and sensibility (think classic French techniques married with pristine Japanese ingredients), albeit with a few Florida touches. The larger space allows for discrete moments at each meal, while three tasting menus run the gamut from tightly edited and more affordable to loaded with luxury ingredients. No matter the selection, expect refined dishes punctuated by the seasons, as in chawanmushi with an autumnal twist of braised sweet potato, kombu, a

Husband-and-wife team Mark and Jennifer Berdin helm this intimate eight-seat counter, which began as a small market stand before evolving into an eight-seat tasting-menu experience. The atmosphere is relaxed and personable, with Chef Berdin preparing each course directly in front of guests, balancing focus with an easy warmth. Expect a generous progression that moves from composed small dishes and pristine sashimi into a carefully paced nigiri sequence, built piece by piece with warm rice and clean seasoning. A thoughtful fish-based ramen and restrained desserts round out a meal that feels bot

Taste of Chengdu

Chinese, Sichuan · Bib

A long-standing restaurant in the Orlando area, Taste of Chengdu promises exactly that, as the expansive menu is singularly focused on Sichuan specialties. Chef Xiong "Tiger" Tang shows restraint in his use of spices, instead opting for depth and balance; dishes like their pork wontons arrive in chili oil that carries real flavor, not just heat, and mapo tofu is soft, silky and generously portioned. The cucumber salad offers a refreshing counterpoint, lightly sweet with a welcome vinegar snap, while cumin lamb brings a different kind of warmth, fragrant and earthy.Heat seekers will want to dig

Enter Chef/owner Sean "Sonny" Nguyen's trendy ramen haven and you'll find two rooms dressed with concrete floors, a marble bar and wood panels set aglow by a starburst light fixture. The second room cradles the bulk of the crowd. As the name illustrates, this chef makes his culinary "dreams come true" by dint of a classic-meets-creative menu. Beyond the small plates lies the star item—ramen. Creations, like the Ritchie Rich and Curry, are full of bold, memorable flavors and certainly worth a slurp. Tokyo ramen with shoyu chicken broth, fried chicken thigh and duck fat is a sensory feat. Couple

Chef Tim Lovero has fashioned a singular take on the neighborhood gem at this contemporary spot in Audubon Park. Step inside and feel instantly at home, thanks in part to a warm, first bite from the kitchen delivered moments after arrival. It's just the beginning of an enjoyable meal crafted from their ever-changing, shared plates-style menu. Warm potato naan is served with whipped chicken skin butter and marmalade; tilefish is given a cioppino interpretation with crispy sourdough; but dessert is the scene stealer, taking the classic fries and a milkshake combination and turning it on its head

Concrete floors and a black ceiling lend a contemporary-cool vibe to this small space located a few blocks from the ocean in the center of Cocoa Beach, while Chef Daniel Joseph Penovich's kitchen is a quirky mashup of Japanese styles that doesn't take itself too seriously. The omakase is a splurge (available by reservation) but bento boxes at lunch are a great value. Some of the strongest dishes include gambas al Japón, featuring tail-on binchotan-grilled Canaveral white shrimp with crispy garlic, as well as the Everything (Everywhere, All At Once) roll with its riot of ingredients and distinc
