Chef Danny Lledó's kitchen is equipped with a smoker and a wood-fired hearth to produce a menu that proudly extols Spanish cuisine with a focus on the delights of Valencia. Morsels like dill-cured bonito arranged with creamy, cool ajo blanco lead up to heartier compositions such as crisped-skin turbot with smoked trout roe-studded beurre blanc. The rice preparations steal the show, like the Alicante-style rice with rabbit and mushrooms cooked over the hearth. The meal is creative and intriguing, while showcasing first-rate products procured with an eye toward sustainability. The sparely elegan

“Sababa,” which means “cool” in Hebrew slang, is exactly as advertised. This ode to the Middle East is awash in Mediterranean tiles. But despite the hip digs, it’s all about food here. The fine-tuned menu features Israeli salads, dips and kebabs, but small plates are its heart and soul. Start with salatim, a five-salad starter. Then choose from dishes such as charred eggplant with herbed labneh, fried cauliflower with tahini and raisins. The list goes on, but one thing to never skip is the hummus. It’s so much more than the usual that it’s even listed as a daily special. Keeping in line with t

A talented husband-and-wife duo is behind this appealingly contemporary, hipster hot spot. The setting is the perfect match for its modern, edgy cuisine, which meanders from the Middle East and Mediterranean all the way to Asia. There is unabashed creativity unleashed in such dishes as ricotta gnudi along with a frothy sour cream soubise and lemon beurre. Baby carrots with labneh and cashew pesto are an alluring side dish, while the pistachio olive oil cake with goat cheese mousse, blackberry and candied pistachio will leave a lasting impression. Since you get to mix and match menu items, the b

In quiet Chevy Chase, on the border of Bethesda, this buzzy restaurant is well on its way to becoming a neighborhood essential. Far from flashy, the team isn’t out to redefine a cuisine or break any culinary boundaries. Ricotta dumplings, beef tartare, a properly cooked filet of trout – these are familiar flavors handled in a confident manner. There is the occasional surprise, like the excellent lamb-stuffed pita. And for dessert, there is no escaping the tiramisu ice cream, a triumphant finale that nobody will want to share. A reasonably priced set menu appeals to those not in the mood to mak

Walk by the kitchen at this Columbia Heights Puebla-inspired restaurant and you'll see a chef forming corn masa into tortillas and cooking them on the griddle. It's the attention to detail that makes this Mexican spot a neighborhood favorite. The menu may be concise, but every dish is made fresh and with great care. Even the green salsa that hits the table as soon as you take your seat is a standout. Start with the tacos—lighter than traditional tortillas—typically layered with crispy-edged, juicy barbacoa and red chili oil-flavored chorizo. Follow that up with the regional specialty—mole pobl

This indie hot spot with a retro-chic décor and cool staff has many things going for it. First, there’s the team, who’ve already struck gold on the dining scene. Then there’s the setting, inside the former Heller’s Bakery, which was a local institution. Finally, there’s the menu starring contemporary dishes with a focus on fermentation. The café offering sandwiches and pastries by day is beloved, but it's at dinner when this kitchen truly comes to life, turning out quirky food with enticing flavor profiles. Beautiful orange carrots dusted with shio-koji is coupled with rye miso for a crowning k

Once a pop-up and now a full-fledged brick-and-mortar establishment, this young'un is making waves in the city’s ramen scene. The kitchen runs the length of this sleek, narrow space in Petworth; and the young chefs running it move about with the deftness of a team many years older. They are as focused as the menu, which is all ramen except for the karaage served with yuzu mayo.Carefully composed bowls feature thin, chewy, house-made noodles accompanied by delicate broths with nuance and depth. The signature bowl is a smoky, triple-threat combination of tonkotsu, chicken chintan and dashi. The

There isn’t a morning that can’t be made or a long night that can’t be undone thanks to Ana-Maria Jaramillo and Gus May. Once a pop-up, their cooking has found a home wedged in a strip of restaurants in Mt. Pleasant. Quick and efficient, this simple counter serves just coffee and a handful of tacos mined from a time living in Texas. Their breakfast tacos offer a singular kind of satisfaction; each one made with a superb flour tortilla kept warm in tightly wrapped foil. Fillings include soft scrambled eggs, creamy pinto beans, queso and meats like bacon, chorizo and even brisket. Take your taco
