(Temporarily closed). It is hard to find a better restaurant than this for La Mancha cuisine in the Spanish capital, where the self-styled “cocina de monte bajo” (which literally means “scrubland cuisine”) is shown due respect and transformed into a gourmet experience. Located in the heart of the city’s Salamanca district, it offers different dining options, ranging from tapas and “raciones” (the Iberian ham croquettes are an absolute must) at the bar to more gastronomic fare in the dining room in the semi-basement. The kitchen shows great character, bringing the flavours of La Mancha to the S

Haute cuisine in an exclusive setting? Here you can savour the culinary creations of renowned chef Ramón Freixa, who describes himself as Catalan but with a strong Madrid influence! With this luxurious establishment in the heart of the Salamanca district, the chef has taken a step further by diversifying his offering with two concepts that seek to satisfy different audiences. Atelier, a kind of clandestine speakeasy within the larger Tradición, has guests sit at a single U-shaped table, allowing the chef to come and go from the open kitchen and interact constantly with the customers (only 10 d

Modern Cuisine · ★ Michelin

Gaytán is the culmination of a dream which then became a reality for chef Javier Aranda and as a result is far from your usual type of restaurant. This space, which features an interior with many design details and two private lounges, is dominated by original wooden columns that flank the large open kitchen overlooking the dining room, so that guests feel as though they are part of the creative process. The cuisine, complemented by a small menu for business customers during the week, aims to showcase what they describe here as the “the joys of the season”, something they succeed in doing via

In this restaurant located in a residential district of the city, the undisputed stars of the show are the ingredients (such as bonito tuna to which a special section of the menu is devoted in season) and flavour. The extensive à la carte of traditional Basque cooking, including an array of rice and cod dishes and stews, is complemented by a tasting menu. One standout dish that we particularly enjoyed was the “cogote de merluza” – simply cooked and delicious neck of hake drizzled with garlic and parsley oil.

If you enjoy Japanese cuisine, this is one of those places that is a must given its focus on presentation and the innovative touch that they add to its dishes (over 35 different courses). Chef Steven Wu, who trained in restaurants in both Tokyo and Kyoto, offers guests his surprise Omakase menu which is the only option here. His Kaiseki-style cooking places full emphasis on the seasonality of ingredients and a respect for tradition, replicating the five types of time-honoured preparation and cooking methods to ensure the perfect harmony between visual and tasting sensations. The Sandoval brothers (with Mario in the kitchen, Diego at the head of the dining room and Rafael as sommelier) are, without a doubt, three great aces of Spanish hospitality. The magnificent restaurant, which covers an area of 1,100 m², elevates the experience by being laid out in stages that allow you to multiply the sensations, with stops at its colourful English-style bar, in the small room dedicated to The Macallan whiskies, in the spectacular wine cellar (it even has a 'sacristy' where sherry is poured with a venencia) and, before moving on to the dining room, a final aperitif in the kitc

In this elegant restaurant, attached to the luxury Hotel Wellington and overseen by award-winning chef Ricardo Sanz, savour spectacular nigiri prepared with rice from the Ebro delta, carabinero prawn usuzukuri with a salsa made from its own coral, and tuna tataki with vitello tonnato, alongside signature dishes such as “huevos rotos”, in which the eggs are accompanied by fingers of Canary Island potatoes and bluefin tuna instead of the usual ham. The chef has developed a legendary reputation by being the first to move away from the hallowed turf of Spanish cuisine to introduce a concept that c

This restaurant in the heart of the city’s Goya district is the next step in the career of chef Álex Marugán, whose previous, somewhat more modest experience was in the nearby Mercado Torrijos. In this contemporary bistro-style eatery, he concentrates on contemporary cooking that incorporates an array of Latin American touches (especially from Mexico and Peru) to add distinct flavour to his dishes, which are interesting and highly delicate. The à la carte comes in two parts: “Los de siempre”, featuring his iconic recipes such as “Torrezno” (a fried bacon snack) and the “ossobuco pibil taco”; a
