The most striking thing about this restaurant housed in an industrial loft in the Salesas district of the city is how it embodies Vitoria-born chef Diego Guerrero's determination to be free to create, to surprise and to break down the barriers around our personal comfort zones. The high-ceilinged interior has a relaxed feel with its exposed brick walls, retro design features, internal patio and an open-view kitchen that maximises the connection between the chefs and their customers. There’s also an annexe (DSPOT Studio & Events) dedicated to creativity, research and event planning. Thanks to h

Displaying an elegant avant-garde aesthetic, this is a truly unique space... on the top floor of a nineteenth-century building! Here, where there is also a spectacular terrace, you can enjoy a culinary experience in the form of four menus, all with wine pairing options: Esencia laborables (available Thursday and Friday at lunchtime), Esencia (evenings and Saturdays, with the possibility of adding further dishes), the so-called Madrid, Madrid, Madrid and, finally, the so-called Gran Madrid. Chef Paco Roncero, who has an unwavering enthusiasm for olive oil, demonstrates his full creativity in his

It was clear that Gofio’s cuisine needed a change of scenery and a larger space in which to give full rein to the cuisine of the Canary Islands, and at first glance it seems to have worked! The new premises, located in a street parallel to the ever-busy and bustling Gran Vía, is laid out on two floors with a private space at street level and the main dining room in the basement, in the style of a modern bistro with an open kitchen. The Tenerife-born chef at the helm, Safe Cruz, showcases the traditional flavours of the islands from a creative perspective on three tasting menus (Gofio Express, C

A restaurant with an industrial vibe in the heart of the city’s Chueca district, featuring an open-view kitchen impressively and enthusiastically run by Juan D'Onofrio, a young Argentinian-born chef who is very happy with his life in Madrid. The aim of the contemporary cuisine here is to showcase the full nuances of the Mediterranean, to which the chef adds interesting Argentinian influences, with a strong focus on fire and the grill (all dishes pass over the coals or are smoked), and the use of aged fish and meat in which every flavour is emphasised. Savour Japanese cuisine in this exclusive restaurant bearing the hallmark of famous sommelier Marcos Granda, where the full focus is on enjoying the experience without worrying about the time (“toki” in Japanese). In this intimate and exclusive setting centred around a single sushi bar that is designed to personalise the guest experience to the full (Toki only has six seats!), chef Tadayoshi Teddy Motoa guides us on a magnificent journey through the history and evolution of Japanese cooking. His tasting menu shows us how the preparation of nigiri has changed over time (especially in the prepar

Located inside the luxurious and centrally located Hotel Urban, CEBO is run by Javier Sanz and Juan Sahuquillo, two young chefs who have enjoyed considerable success at their restaurants in Casa-Ibáñez (Cañitas Maite Gastro and Oba-). In this intimate and romantic setting, where high levels of service are very much to the fore, they look to explore in even greater detail the natural flavour of every ingredient (sourced from their own vegetable garden and small-scale producers around the country) with a focus on simplicity and superb technique, as highlighted in sauces that are perfectly balanc

The Sandoval brothers (with Mario in the kitchen, Diego at the head of the dining room and Rafael as sommelier) are, without a doubt, three great aces of Spanish hospitality. The magnificent restaurant, which covers an area of 1,100 m², elevates the experience by being laid out in stages that allow you to multiply the sensations, with stops at its colourful English-style bar, in the small room dedicated to The Macallan whiskies, in the spectacular wine cellar (it even has a 'sacristy' where sherry is poured with a venencia) and, before moving on to the dining room, a final aperitif in the kitc
