In the heart of the old town, rustically charming dining rooms of varying sizes welcome guests with authentic warmth. Try booking the most intimate room, where the Friulian fogolar fireplace crackles and spreads the scent of embers, creating a homely atmosphere. On sunny days, the inner courtyard of the historic building becomes a pleasant refuge, bathed in soft light and silence interrupted only by the clinking of glasses. The all-female waiting staff are quick but attentive, with discreet smiles accompanying every course. The food reflects regional tradition with simplicity: classic cooking

This perfectly restored old mill is home to a chef who creates original cuisine that demonstrates her connection with her region and showcases ingredients grown in the restaurant’s own kitchen garden, especially the aromatic herbs that are a characteristic feature of many of the dishes served here. Antonia Klugmann’s house stands in attractive unspoilt scenery near the Slovenian border and in the middle of two major wine-producing areas, namely the Colli Orientali del Friuli and the better-known Collio, both of which are well represented on the extensive wine list.

Ronchi Rò is an estate and agriturismo immersed in greenery, among the rolling hills of Collio and its lush woodlands: a borderland of captivating and almost fairy-tale character, celebrated for its extraordinary wines, the only ones to appear on the small dedicated list. The cooking of chef Fares Issa is flavoursome and forthright, vivid in colour and deeply seasonal. Drawing on a fine selection of local produce – salami, prosciutto, goose speck, cheeses – it also offers dishes of a more contemporary profile in which his imagination comes to the fore: excellent, for instance, the raviolacci f

Serving signature cuisine, Agli Amici is one of the leading restaurants in Friuli-Venezia Giulia, a border region of diverse cultural influences that is teeming with top-quality ingredients. Many of these are showcased on two tasting menus (one of which is vegetarian), as well as a small à la carte selection of “piatti del cuore” featuring the restaurant’s classic favourites. Owner-chef Emanuele Scarello makes full use of the array of ingredients from the region’s pastureland, mountains and vegetable gardens, which he transforms into culinary works of art. In the heart of Collio, among gentle hills just steps from the Slovenian border, this restaurant stands as a true gastronomic ambassador of the territory, celebrating tradition with consistency and warm hospitality in relaxing surroundings where time seems to slow down. The menu embraces the most authentic cuisine – the zlikrofi, potato-and-chive-filled tortelli served with pan juices and shavings of aged Montasio are emblematic – alongside more contemporary interpretations, such as an elegant, restrained squab presented in two services. The carefully curated cellar tells the story of the land

In the small, bespoke dining rooms – our favourite is the more traditional one, where the warmth of the fogolar fireplace and the crackling of the embers accompany the owner's interactions with guests – this charming stone and brick house, surrounded by a wooded park, tells the story of the local area through its aromas and flavours. Charcoal grilling is the beating heart of the kitchen, releasing intense aromas that waft through the air; the creamy, comforting risottos are surprisingly well-balanced, an excellent example being that with clams, saffron and courgette flowers. Few kitchens reflect their chef’s personality as clearly as Chef Ana Roš Stojan’s. Her strong, determined character and infectious warmth find perfect expression in a single tasting menu where dishes possess bold, decisive flavors with no compromise. Each course is a discovery: local ingredients and Slovenian traditions converse with international influences, balanced through refinement, taste, and technical precision. The Orme menu traces this journey with distinctly characterized yet elegant dishes, animated by a note of vivacious and refined freshness. Dishes that captivate on sight through

Located in a 16th-century castle in Ceglo, in the heart of the Brda wine region, this restaurant offers breathtaking views of the stunning surrounding vineyards, which are particularly beautiful in autumn. The contemporary and delicious cuisine is showcased through a small selection of carefully chosen dishes, which can be combined into 3, 5, 7 or 9-course menus. The most memorable dishes include porcini mushroom ravioli with sweet and sour chanterelles and mushroom cream, and those with a sweet tooth can enjoy an amazing date cake with salted caramel and ricotta ice cream.
