Home to the “world’s best flamenco tablao”, this historic venue is now enhanced by two highly distinct dining spaces: the Tablao restaurant, where you can dine while watching the live flamenco show; and a separate contemporary gastronomic space which is much quieter and has seating for just eight guests. In the latter, overseen by chef David García, the decor and service shine through, providing an impressive backdrop for a single, modern tasting menu (Compás) with a strong nod to the chef’s Basque origins. Another impressive feature here is the sublime wine cellar, which boasts a magnificent s

This restaurant, which is beaming with a new energy after a change of location, surprises and leaves everyone wanting more from its culinary proposal. Here you can enjoy traditional market cuisine, with modern touches and nods to other cultures, which finds in the embers the common thread of many elaborations. There is also an interesting tasting menu. The most outstanding dishes were their popular grilled Hass avocado, the Santé steak tartare (prepared in full view of the diner). To finish, try the very creamy and completely deconstructed cheese tart.

Enjoy informal haute-cuisine in this French bistro-style eatery in the traditional La Latina district of the city. Trèsde is run with great enthusiasm and passion by three life-long friends (in charge of the kitchen, dining room and back office, respectively). The market-inspired menu, which favours vegetables grown in traditional “navazo” gardens found in coastal marshland areas, has revitalised the starter/main course/dessert concept, with a choice of dishes from a concise yet meticulously prepared list. An additional bonus is the surprising three-glass pairing featuring sherry, sake and min

Shibari Sushi and Grill
Japanese Contemporary
€€
Under this name, which nods to the Japanese art of binding and could be translated as ‘bond’, we find a humble and informal restaurant that specialises in Japanese grilling and showcases robata cooking as its hallmark. They offer an à la carte service, but we recommend the Omakase menu, as it takes you on a varied journey through their most significant dishes, such as the snow crab Monaka with smoked baby eel or their tasty brioche with prawns cooked on the robata, lightly seasoned with seven Japanese spices.

Ebisu by Kobos

Chef José Kobos Cortés says that “we eat every day but to smile while we do so is something else altogether”. Here, just a few metres from the Cebada market (in the La Latina district), he has created his Japanese-inspired cuisine (he spent a year working in Japan under the baton of culinary maestro Norihito Endo) around solid technique and the seasons. In this unpretentious restaurant, where everything revolves around a small sushi bar, he conjures up a single Omakase menu that normally starts with a green tea to welcome you (and which is then constantly refilled). Before starting the tasting

Do you consider yourself a fan of mushrooms? If so, next to La Latina underground station... you have a must-visit restaurant! In this simple establishment, with a modern rustic atmosphere and a decorative theme based on the world of mycology, you'll find a unique menu, quite personal, where they select five seasonal mushrooms that take centre stage. Don't hesitate to ask anything you want about mushrooms, as they are happy to answer questions and show you books that complement the information!
