Revithia

Country cooking, Traditional Cuisine · ★ Michelin

Before you've even taken a bite, Revithia captures your heart. The restaurant is set in Kayakapi – the name of both the hotel and the UNESCO-listed historic neighbourhood. Inside, the traditional decor exudes charm; outside, the terrace affords breathtaking views over the valley and the city. And the celebration of the region continues on the menu. The chefs use the finest local ingredients in a homage to age-old, nearly forgotten recipes, which they spruce up here and there with playful textures. The way in which different textures of aubergine – including an airy dip and a cream with tahini –

The valley spreads before you with wild flowers, apricot and plum trees and rugged rocks – with such a breathtaking view, securing a table on the terrace of this traditional house is a must. Ayşe and Adem Koçdemir have an intimate relationship with their terroir and work almost exclusively with local ingredients, including produce from their own garden. Dishes are presented on wonderful terracotta tableware: delicacies such as a tomato broth with peppers and olive oil that tastes both sweet and subtly confit, accompanied by cracked bulgur and fantastic Turkish bread. Then there are the stuffed

Happena

Traditional Cuisine · Bib

Happena transports your taste buds back to the era of the Hittites, who founded an empire in Anatolia thousands of years ago. Drawing inspiration from ancient texts, the chefs bring this distant past vividly to life on your plate. Expect traditional spices, crisp grilled meats and tender cuts, such as lamb cooked over a wood fire until beautifully caramelised, served with pita bread, a honey and ginger sauce, and fermented pickles and grapes. The extensive menu is simply wonderful, as is the setting. Set on higher ground, this restaurant is part of the Kelebek Special Cave Hotel and brims with

Be careful not to drive right past this rather unassuming-looking corner-plot building, as it would be a shame to miss this restaurant. Its cosy charm is irresistible, from the creaking wooden floor to the red-and-white check upholstery. The women's cooperative at the helm delivers wonderful traditional dishes based entirely on home cooking. You can watch them in their small kitchen as they prepare manti with local cheese and top it with tomato sauce, or shaping meatballs and cooking them in a rich tomato jus. The menu is concise, and it's wise to arrive early to avoid disappointment, but the

Make your way from the centre of Göreme, past the charming boutiques, to the grounds of Sultan Cave Suites, home to the town's highest-altitude restaurant. The approach has a touch of magic to it – a feeling confirmed the moment you take in the magnificent view from the terrace. This is the perfect spot for watching the sunset! The menu reveals a clear devotion to traditional Anatolian cuisine: yoghurt with candied and fresh fruit or generously stuffed dolmas to start, followed by Cappadocian ravioli stuffed with minced lamb, accompanied by gently simmered chickpeas and yoghurt flavoured with

Diners are welcomed with a complimentary spread of various little appetisers and sweet beverages, a gesture that immediately reflects the importance placed on hospitality here. This is the cosy halal restaurant on the first floor of Şah Saray Cave Suites, which affords wonderful views over the valley. The menu is a celebration of the culinary traditions of Turkey and the Islamic world. Imagine an earthenware bowl filled with finely sliced beef elevated by dried plums, onion and herbs, served with a side dish of rice with almonds and raisins. A delicate sweetness runs subtly throughout, always
