Smoked Room
Contemporary · ★★ Michelin

This restaurant is somewhat reminiscent of a clandestine dining space, and as such a meal here is quite the experience, where the team in the kitchen play ingeniously with smoky flavours and aromas without ever overwhelming the palate. Located in the Hyatt Regency Hesperia Madrid, Smoked Room has its own entrance and views itself as a highly exclusive dining space which is separate from the Leña Madrid restaurant and has its own valet parking service. The aesthetically pleasing dining area has an intimate, meticulous feel and features a striking Japanese-style bar facing the kitchen as well as

The Sandoval brothers (with Mario in the kitchen, Diego at the head of the dining room and Rafael as sommelier) are, without a doubt, three great aces of Spanish hospitality. The magnificent restaurant, which covers an area of 1,100 m², elevates the experience by being laid out in stages that allow you to multiply the sensations, with stops at its colourful English-style bar, in the small room dedicated to The Macallan whiskies, in the spectacular wine cellar (it even has a 'sacristy' where sherry is poured with a venencia) and, before moving on to the dining room, a final aperitif in the kitc

If you’re keen to take your tastebuds on a culinary journey, Quimbaya provides the perfect opportunity, thanks to chef Edwin Rodríguez’s ability to recreate the flavours of his native Colombia, the birthplace of the movement known as Magic Realism. This restaurant, which takes its name from an indigenous native tribe famous for its gold craftsmanship, features a small bar displaying a superb array of Colombian spirits, and a minimalist dining room with an open-view kitchen where guests can interact with the chefs at work. The cuisine here is based around three tasting menus: Clásicos Q (offerin

Rodrigo de la Calle defines himself as a culinary ambassador for the plant kingdom, a valid claim given the efforts he has made to champion our natural surroundings and his role as one of the pioneers of “green haute cuisine”.In his restaurant, with its open-view kitchen behind the bar counter, guests can observe dishes being prepared in front of them and interact with the chef, while at the same time discovering his culinary philosophy, which is more gastronomic and introspective in the evenings (for lunch, without losing its essence, it is a little more informal), which makes vegetables the

The most striking thing about this restaurant housed in an industrial loft in the Salesas district of the city is how it embodies Vitoria-born chef Diego Guerrero's determination to be free to create, to surprise and to break down the barriers around our personal comfort zones. The high-ceilinged interior has a relaxed feel with its exposed brick walls, retro design features, internal patio and an open-view kitchen that maximises the connection between the chefs and their customers. There’s also an annexe (DSPOT Studio & Events) dedicated to creativity, research and event planning. Thanks to h

Toki
Japanese · ★ Michelin

Savour Japanese cuisine in this exclusive restaurant bearing the hallmark of famous sommelier Marcos Granda, where the full focus is on enjoying the experience without worrying about the time (“toki” in Japanese). In this intimate and exclusive setting centred around a single sushi bar that is designed to personalise the guest experience to the full (Toki only has six seats!), chef Tadayoshi Teddy Motoa guides us on a magnificent journey through the history and evolution of Japanese cooking. His tasting menu shows us how the preparation of nigiri has changed over time (especially in the prepar

In the heart of Chamberí, this elegant restaurant has been built on four solid pillars: personality, professionalism, hard work and an unbreakable will! The driving force behind the project is Rubén Hernández Mosquero, a globetrotting chef from Extremadura who has worked in some of the most prestigious establishments (Noma and Geranium in Copenhagen; Azurmendi in Larrabetzu; Il Ristorante at the Bvlgari Hotel Tokyo; Minibar by José Andrés in Washington; Atomix in New York...). EMi, a heartfelt tribute to his brother (Emilio, now deceased), has been devised as a haute cuisine bar for a maximum

Here, in the impressive Madrid outpost of sommelier and restaurateur Marcos Granda, the owner of the famous Skina restaurant in Marbella who has brought this different dining option to Madrid, the kitchen and the wine cellar take on equal prominence. This eatery, with its contemporary ambience, is the perfect setting in which to enjoy modern cuisine with a creative tint, based around the traditional flavours and the best ingredients from around Spain. Here, the gastronomic approach is epitomised by Clos Madrid’s mantra: great restaurants are those that make guests feel important. The name Clos
