Creative, Modern Cuisine · ★ Michelin

An interesting gourmet option in the centre of the city, located at the foot of the emblematic Santa María de La Antigua church, one of the indisputable icons of Valladolid architecture. The restaurant, preceded by a terrace that is almost always full of university students, features a contemporary yet informal gastro-bar (Crisol) where you can order the daily menu as well as fun dishes designed for sharing. The restaurant’s so-called gastronomic space, with its open-view kitchen and decorative details inspired by the molecular cuisine that has lent the restaurant the second half of its name, i

It has always been said that wheat (“trigo” in Spanish) is the gold of Castille, hence its historical importance to the region. The restaurant, located just a few steps from the cathedral, reflects the strong passion that chef Víctor Martín has for his cuisine. Alongside his wife Noemí Martínez, a renowned sommelier who runs the dining room, he focuses on creative and contemporary cooking with strong roots in tradition, and is based on his relationship with small suppliers and their superb local produce and ingredients (vegetables from Tudela de Duero, pigeon from Tierra de Campos, chestnuts fr

Suite 22
Contemporary
€€
Suite 22 occupies the former stables of the Palacio del Marqués de Castromonte in the heart of the city, where its welcoming barrel-vaulted dining room, bringing together past and present, comes as a pleasant surprise. Chef Emilio Martín's approach, with a contemporary seasonal menu, several set menus, and the option of sharing dishes, reflects a modern yet invariably self-taught and personal style of cooking, with well-balanced flavours that seek to break away from established norms. The chef, who considers Iberian pork to be one of his preferred ingredients, also likes to incorporate nods to

Villa Paramesa

A longstanding family-run restaurant that has grown in size and comfort since its move to the bustling Plaza de Martí y Monsó, one of the main tapas areas in this provincial capital. It now boasts a terrace, tapas bar where there is never a lack of atmosphere (in both spaces you can enjoy a selection of individual small snacks, such as the baby squid roll in its own ink, with lemon and piparra chilli pepper, and the “three little pigs” featuring suckling pig with ajoblanco, ponzu and pibil), and a glass-fronted kitchen that is immediately visible on the way to the contemporary-style dining roo

€€€
This restaurant, located in the La Victoria district of the city, boasts a popular tapas bar by the entrance plus a dining room in which the reasonably varied à la carte stands out for its quality. On it, you’ll find delicious Iberian ham, scrambled egg dishes, home-style stews, as well as superb fish and seafood (red prawns, scallops with onions, baked sea bass with garlic etc), which is unusual given the restaurant’s distance from the sea. The extensive wine list features several international labels.

Dámaso
Farm to table
€€
With his natural humility and technical expertise, chef Dámaso Vergara is the real epicentre of this restaurant, a feeling that comes to the fore when he sits down to curate a bespoke, market-inspired menu for you (including small-plate options). The setting is the tranquil La Galera country club on the outskirts of Valladolid, where the dining room overlooks the golf course’s 9th tee. Dámaso is particularly popular with a regular business clientele.

Llantén
Traditional Cuisine
€€
If you’re celebrating a special occasion and are on the lookout for a restaurant with plenty of charm, look no further than this eatery located in the “Pinar de Antequera”, a residential development on the outskirts of Valladolid, which continues to surprise thanks to its landscaped surroundings and feel of a Menorcan farmhouse – the latter enhanced by the welcoming open fireplaces that provide the perfect ambience for a romantic candlelit supper. Here, the honest, traditional cuisine has been given an impressive modern makeover, including highly memorable dishes such as goat with alioli, beef
