Emelina
Cuban · ★ Michelin
$$$
Chefs Osmel González and Camila Salazar's cuisine at Emelina asks what Cuban cuisine would look like if global inspiration is applied to its foundation. It's an intimate space, with a handful of counter seats facing an open kitchen, but it's their keen perspective and skillful cooking that feel deeply personal. Most of the ingredients are sourced from South Florida to tell a unique story. Poached local oysters with yucca foam and mushroom powder show refinement, while cherry tomatoes with Cuban oregano chimichurri and macadamia milk foam showcase how simple ingredients can shine. Palm Beach Meats

$$
Close to the heart of West Palm Beach in a contemporary space that's part gourmet market/retailer and part restaurant, Eric and Meghan San Pedro's spot is, no surprise, all about meat. However, it's not just any meat, it's exclusively wagyu, sourced from Japan, Australia, and the U.S. That said, the space is more casual than might be expected with wood tables and caramel leather chairs, plus a tongue-in-cheek "Nice to Meat You" sign. The small menu spans everything from a wagyu pastrami and fried egg breakfast sandwich and he ever-popular wagyu burger to a PB&J with wagyu tallow peanut butter

This West Palm Beach spot originally opened in 2014 but since then it's leveled up with an in-house bakery and an open kitchen. The interior isn't fussy, but the all-day dining menu sure does tempt with its array of baked goods and breakfast sandwiches in the morning and soup, salads, and sandwiches at lunch. There's even a sampling of dinner options that are ready to go home and reheat. The menu is updated regularly and there are always specials but if they have the black bean and tomatillo soup, it's a worthy order. The red-tinted broth is loaded with flavor; sided by two slices of house-mad

Moody Tongue Sushi
Sushi
$$$$
If beer and omakase seem like odd bedfellows, you obviously haven't been to Moody Tongue Sushi. Located in the Hilton West Palm Beach (check in is even in the lobby), the space has a high-end sushi den vibe complete with dim lighting and rich, dark colors. As for the sushi, it's ambitious yet approachable and leans Western in style (think plenty of garnishes and sauces) with some Floridian flair thrown in for good measure. Madai finished with orange zest is perfectly paired with their Orange Blossom Belgian Blonde, while kinmedai is given a bold kick thanks to torched miso. You won't soon forge

būccan
American, Contemporary
$$$
This Palm Beach mainstay is beloved by locals who flock here for Chef Clay Conley's expansive contemporary American menu. From crudos and shared small plates to pastas, there's plenty to choose from here, where several dishes are staples but most rotate with the seasons. Begin the short rib empanada, one of buccan's staples. Drizzled with aji amarillo sauce and finished with salsa criolla, it's a perfect beginning. Pasta always suits, especially when half-orders facilitate enjoying more than one, but don't skip dessert. The Bananas Foster butter cake takes a standard finale and infuses it with
