Jean-Marc Pérochon
Modern Cuisine · ★ Michelin

Seated behind the restaurant’s floor to ceiling windows, admire the sun’s rays glinting on the ocean. A talented skipper has dropped anchor here in the person of Jean-Marc Pérochon who went to sea at 17, crossing the channel to Scotland, before cruising around Europe and as far as the West Indies. In his hotel-restaurant, his cooking is both minimalist and sprinkled with exotic flavours, extractions, stocks and emulsions, leaving our tastebuds aching for more. He believes in working only with first-rate goods, namely fish and shellfish from the fish auction at Saint-Gilles-Croix-de-Vie (which

Les Genêts

This stylishly refurbished mansion a few kilometres from Les Sables-d'Olonne is home to talented couple Amélie and Nicolas Coutand. An advocate of fresh, seasonal produce, his approach is creative, joyful and flavoursome; regional ingredients take pride of place on his menu, from premium produce to humbler items such as sardine, mackerel and hake. A huge 1 400m2 kitchen garden brings a vegetal flourish to his light, exquisitely refined dishes. On weekday lunchtimes, bistronomy is the name of the game.

L'Inattendu
Modern Cuisine

Tucked away amidst villas and holiday homes, L'Inattendu is as unexpected as its name suggests. One pleasant surprise follows the next from the appetisers to the dessert, as diners sample deftly crafted, creative cuisine. Chef Paul Bonneau has a knack for enhancing locally sourced ingredients: veg from market gardeners, hibiscus, saffron and lemon jellies, ice creams and mousses. Dishes you may taste range from sardines, blueberries and potatoes; pearlescent cod, cucumber and sunflower; squab breast, tomato and strawberries. You can bank on a warm welcome and wholehearted enthusiasm from the f

In the heart of a charming village in the Bocage Vendéen, chef Tanguy Rattier cooks up contemporary cuisine rooted in his terroir, underpinned by brilliant finds sourced from local producers. The hearty dishes are packed with bold flavours: hake steak with aubergine pulp and artichokes, a full-bodied jus; peach and blueberry tartlet with a sweetly tart flavour.

Located in a village nestled in the Marais Breton, this restaurant is run by a couple of young industry professionals: Mathieu Blanchet in the kitchen and Pauline Merceron front of house. The seasonal cuisine makes the most of high-quality local produce – think courgette panna cotta, lemon condiment, lamb's lettuce and onion pickles, or skate wing terrine, caper butter, leek maki and black sesame. In an understated, minimalist setting, the open kitchen is laid out behind a long, pale-wood counter. Friendly service with a smile. Lunchtime set menu, à la carte options and a tasting menu in the e

Le Petit Saint Thomas
Modern Cuisine

This endearing family-run restaurant is popular with a crowd of locals. The chef, at the helm for over twenty years, painstakingly rustles up French staples, albeit with a tasty new twist and the odd hint of exoticism (curry, sobrassada, nori, mafé, coconut).

Restaurant Côté Marais
Modern Cuisine
€€
A starter of ceviche of white mullet (a fish rarely found on restaurant menus) with rhubarb for a hint of tartness, followed by a savoury/sweet main course of pollack fished by small boats, French peas al dente and a smattering of sweet cherry condiment. The young chef applies his own personal culinary style to local ingredients, while his partner works the restaurant floor in this outlying establishment surrounded by marshland (and with a lovely terrace).
