Le Georges
Modern Cuisine · ★ Michelin

Le Grand Monarque, which is home to Le Georges, has withstood the test of time – the hotel’s first mention in the Michelin Guide dates back to 1900! This elegantly appointed establishment is ideally located between Paris and the Loire at a crossroads between the regions of western France. Thomas Parnaud has steadfastly remained true to his mission of shining the spotlight on local producers who respect the environment as he deploys a top-to-tail ethos. Examples include Perche pike with Eure-et-Loir mushrooms and house-made fish garum, or Racan chicken, seasonal endive and kumquat. It would be

On the edge of Rambouillet Forest, chef Cybèle, who formerly ran the Table de Cybèle in Boulogne Billancourt, fell in love with this estate dating from 1850 and where she now grows practically everything she cooks according to permaculture methods… Fresh greens thus play a pivotal role, flanked by fermentation techniques and produce from local growers, in deceptively simple, signature cuisine rich in aromatic legible flavours. The bread, butter and yoghurt are all homemade and the wine list is packed in biodynamic and natural vintages. A Scandinavian slant depicts the venue, which also offers

La Table de Christophe Hay et Loïs Bée
Modern Cuisine, Creative · ★ Michelin

Opposite Limère golf course, Christophe Hay's second establishment sports a contemporary interior inspired by nature and the forest, the chef's main muses, together with vegetables from his garden. The huge open kitchen is in the hands of chef Loïs Bée, whose highly personal score, underpinned by confident technique, is nonetheless perfectly in tune with the house ethos. The delicate, seasonal cuisine is eco-conscious and favours short supply chains and game in season. Think Sologne trout, cucumber, verbena and tapioca; fillet and andouille of ostrich, parsley-flavoured viennoise, wild garlic,

Much like the artist Corot, who painted the nearby ponds, Rémi Chambard turns to nature and produce from Île-de-France for inspiration when it comes to cooking. He devises a set menu that showcases the region by highlighting the different villages from which he sources his ingredients, from Montmorency to Crécy-la-Chapelle. He also personally undertakes what he calls his "urban harvest" in the King's Kitchen Garden in Versailles. This virtuoso chef still takes great pleasure in working with vegetables and plants (as well as other ingredients). Imbued with a certain purity, his dishes are strik

Le Pré Catelan

How time flies! Frédéric Anton has been the chef of the Pré Catelan, the mythical Napoleon III lodge nestled in the Bois de Boulogne and refurbished by Pierre-Yves Rochon with lashings of designer furniture and a palette of green, white and silver tones, for almost 30 years. Born in Nancy into a working-class family, this Meilleur Ouvrier de France learned the ropes under Joël Robuchon. His tasting menu, which stars top-drawer produce (scallops, langoustine, salmon, caviar), is a masterclass of high-flying understatement and razor-sharp precision. The culinary score, which rises to a crescendo

Ducasse au Château de Versailles - Le Grand Contrôle
Classic Cuisine, French · ★ Michelin

This luxurious establishment in the Airelles hotel is steeped in history and inextricably linked to the Palace of Versailles. It combines theatrical staging – with diners being greeted by a valet, and staff in period costume – and cuisine tailored to the occasion. Devised by Alain Ducasse, the menu comprises dishes made with premium produce that reflect the great man's commitment to naturalité. Entrusted to chef Stéphane Duchiron, the food is a masterclass in technical skill, with everything expertly cooked and seasoned, and high-quality sauces and jus bringing out the forthright, distinctive

Awarded a MICHELIN star in 2016, chef Jean-Baptiste Lavergne-Morazzani continues to delight diners in his modern and refined restaurant, nestled in the Cour des Senteurs, a stone's throw from the Palace of Versailles. The set menu, which is regularly updated, whisks you away on a meticulously devised and indulgent culinary journey – dishes include marinated langoustine on a bed of warm rice with a hint of vinegar and agastache leaves, accompanied by a delicious langoustine emulsion. At its core is seasonality and top-notch produce, which is generally organic, sourced from sustainable fishing a

"The best cookbook ever written was by Mother Nature herself," according to Alain Passard. His green philosophy is de rigueur more than ever in his cuisine, which is now entirely free of animal protein. The chef who fetes fruit and flowers never feels more at home than when in one of his three kitchen gardens in the west of France, where his twin vocations of cook and gardener meet. He heads there for inspiration and to explore culinary possibilities, coming back with recipes as accomplished as his "sushi fantaisie" or beechwood-smoked potatoes with wine sauce, for example.
